(great source for recipes - go under "diet" and click "free of" and hit "gluten")
Egg Bread Loaf #51463
1/4 cup shortening (I used butter)
3 tablespoons honey
2 eggs
1 packet yeast (1 T)
1 cup plain yogurt
1/2 cup potato starch
1 1/2 cups cornstarch
1/2 teaspoon baking soda
1 tablespoon baking powder
2 teaspoons xanthan gum
3/4 teaspoon salt
1 teaspoon vinegar
***I also add in a few tablespoons of flaxseed (ground) and psyllium husks for fiber
Preheat oven to 350 degrees F.
Combine all ingredients.
Mix well to remove all lumps.
The dough will be quite wet.
Place dough in greased loaf pan.
Smooth top with wet hands.
Bake 40-45 minutes, until loaf is lightly browned and toothpick inserted in middle tests clean.
I've never used it for a sandwich but it makes great toast. |

Interesting. Does that site pay authors for their recipes? Cause that sounds an awful lot like the Egg Bread Loaf recipe from Robin Ryberg's The Gluten Free Kitchen (discussed over here). _________________ Ostrich :>--O==={
