Just wondering if anyone has used sweet potato flour? I saw that it has high protein and other nutrients. They mix it with white rice flour. I haven't used it or ordered it yet. But I eat sweet potatoes instead of all other potato because of starch/sugar content.

I wish there was a table with all the GF flours listed with what they do and don't do and which is more nutritious etc. I always get so confused...does anyone else?

Yep, it's difficult to keep track of the properties and nutrition of different flours. I try to use fewer white flours and starches like corn starch, white potato starch, tapioca starch, etc. than the other flours and use more whole grain flours like brown rice, garfava, etc. Bob's Red Mill GF flours that are whole grain have a little logo on them that say that

There's a table some that lists how each flour is best used. I'll see if I can find it and post it.
