I'm posting this because it must be TNT if Ty will eat it. I've made a few loaves and they always turn out well. I copied this from Lorka's Recipezaar page. She's a member here, so Laurie, I hope you don't mind that I did this.

1 1/4 cups gluten-free flour
1/4 cup garfava flour
1/2 cup potato starch
1/4 cup cornstarch
1/4 cup flax seed meal
2 1/2 teaspoons xanthan gum
2 teaspoons active dry yeast
1 teaspoon salt
2 eggs
2 egg whites
1 cup water or milk
2 tablespoons vegetable oil
2 tablespoons honey
2 teaspoons vinegar

Combine flours, flax, starches, gum, yeast, salt.
In the mixer, combine wet ingredients, then add the dry.
Scrape the sides, and mix on medium for 4-5 minutes.
Pour into 9x5 pan, and let rise to top of pan (took about 80 minutes). I always, always let it rise in a turned off oven.
Bake at 350F for about 40 minutes.
Remove from pan, cool, and slice.
*use egg replacer of choice to create a vegan loaf, as well as an alternative sweetener for the honey.

Linda's notes re: flour mix
I used this:

1/4 cup garfava flour
1/4 cup tapioca starch
1/4 cup cornstarch
1/4 cup flaxmeal
1/2 cup brown rice flour
1/2 cup sorghum flour
1/2 cup potato starch

That is the recipe I will continue to use.

I vote for TNT too. This makes better loaves then buns [IMO. LOL I should taken some pictures of the crazy shapes], but regardless of form, it works well!!

I vote for this to be TNT also...it ALWAYS turns out good...I make this at least once a week...and my mixer is big, so I triple the recipe and it still always turns out wonderful....I have used it to make rolls (as well as loaves of bread) and used the muffin tins for good shape...don't know about free form buns ..lol...never tried that....big thanks to Lorka for this one... I have tried several bread recipes that do not give consistent results but this one does... Very Happy

This is the best bread ever. This is the only bread I use. I've made hamburger buns, loaves, rolls. Unbelievable bread Very Happy

Could this be the world's biggest Lorka Bun? [you can't tell it here, but this was made in a 8" pie tin].



No! It's Lorka Communion Bread! Smile It's Peg's month for Altar Guild at church and decide to make GF bread so that I could have some too Very Happy

On second thought - a great big burger would be pretty good <drool>.

Does the 1 1/4 cup garfava flour

equal the
1 1/4 cups gluten-free flour

Or is it a total of 2 1/4 cups of flour?

Thanks! And what could I sup for the flaxmeal?

2 1/4. The gluten-free flour I use is either Bob's All Purpose Gluten Free or Amaranth, or a mix of others if I'd like. Quite forgiving. But generally one of those

Does anyone know how to modify a recipe like this to go in a bread machine? I just got a Zojiroushi for my birthday and am eager to try it out. Smile
