I love Buffalo Chicken Wings, but I prefer to not eat so much fat so this 'recipe' gives me the flavor without all of the fat. This isn't so much a recipe as a guideline...
Cook desired rice according to package directions subbing a portion of the water for Frank's Hot Sauce. I normally cook 1/2 cup rice with 1/4 cup Frank's Hot Sauce and 1 cup of water. [For those who prefer more mild flavors, I would suggest starting with a couple of tablespoons of Frank's Hot Sauce.]
While the rice is cooking, I dice a couple of carrots and a few pieces of celery and set aside.
Then saute a chicken breast that has been sliced in a tiny bit of butter and sprinkle it with Frank's Hot Sauce.
When the rice is cooked I add the raw celery and carrots, chicken and toss it all together. When ready to eat I top it with a drizzle of really good blue cheese dressing and a couple good dashes of Frank's Hot Sauce.
This is a common TEC breakfast or lunch because it reheats perfectly in the microwave. |
