I've been GF for about three months now and haven't yet tried buying or making bread. I've been craving meatloaf and meatballs, though, and am looking for good suggestions for a substitute for the bread crumbs or rolled oats I've used in the past as filler. I tried rice with pretty much dismal results - the blandness of the rice sucked the flavor right out of the meatballs. Any suggestions?

Hi Linea!!

One thing you can do is buy Hol-Grain Crackers Brown Rice w/ a Light touch of Salt. They taste like salty cardboard. BUT we didn't want to waste them, so we use them as filler in meatloaf. They are OK as that, but, if you really have a hankerin' for meatloaf...it'd probably taste pretty darn good!!

We will usually take a few pieces of my GF bread (usually the heals) and turn them into crumbs. We have a container of crumbs in the freezer. Whenever we need them to make meatloaf or meatballs - we go right to the freezer!

We normal get Gluten Free Pantry's Favorite Sandwich Bread mix. Manna from Anna is really good too!! Probably the most wheat like bread I've tried. It's made with Montina flour.

The glutenmall.com offers a GF breadcrumb that I've used for everything from meatballs to breaded chicken. It's not bad at all - it just browns a little fun (if you're frying with it). Tastes just great!

Al - thanks for your suggestion, too. I've been using the GF bread (rice-based) and making my own crumbs with some success. The meatballs are a little spongy (I think they'd bounce!) but taste pretty good.

Last night I made crab cakes. I took a couple slices of the GF bread (fresh) and made crumbs in the food processor. I used them to make the crab cakes and then bread them before frying - pretty darn tasty! I had a moment of panic, though, after making two separate batches - one GF and one with sourdough crumbs for hubby - after mixing them in separate bowls, I couldn't remember which was which! Those brain cells are the first thing to go, they say......

I've been using crushed gluten-free corn flakes as a substitute for bread crumbs and I find that this works really well.

I hadn't even thought of that! I've done some kind of baked or fried chicken a long time ago with crushed corn flakes - it was great. I'll try that and get back to you with a recipe. Thanks!

Chicken coated in potato chips is great too. Not exactly heart healthy, but you dip the chicken in melted butter then roll it in the cornflakes then either fry or bake it.
For bread crumbs, I like Schar bread crumbs. They work well and also the ones in the white box from the gf mall. Now I'm getting hungry... Very Happy
