I have only been on this diet a short and still haven't gotten it down. At first you are just down right hungry and can't figure it out. Get some fruits and vegetable to start. I made mashed potatoes to fill my stomach up until I could begin to figure things out. If you have a Whole Foods store, go there. You can find GF bread. It will fill your tummy. They have frozen dinners, cookies, all kinds of things. Someone who has been on it for a while is better off telling you but that is what I did the first week. GF bread, fruit veggies and mashed potatoes. Good luck and it will get easier with time......Nikki from Sugar Land, TX

Thanks Nikki, That's basically what I've started doing but I'm finding out that things I thought were GF aren't necessarily GF. I'm really confused.

It is comforting to know we're in the same boat. How long do you think it'll take to be completely eating GF?

I was GF for 2 weeks and 6 days before I got "glutened" and it got me good Embarassed But I am trying to take it one day at a time and try to relax when trying to find things to eat. I really have been stressed about eating. It is getting easier but gluten will be hiding somewhere that I don't know about yet. I just have to be careful not to let my guard down. It will get easier with time. My fiance' says he is glad I am back to my normal, happy self except when I get "glutened". LOL

I think from the moment you quit eating gluten you will be better or better every day until normal. It's different for everyone.

Feel good!

Hi Ann,

Welcome!! Sorry to hear about your diagnosis...but that is a good thing really. Now you can get on the road to health!

Yes this crazy diet does take some getting used to. Give it about 3- 4 months - by then you should have a pretty good handle on it.

A typical day of food for me...

Breakfast:

Glass of OJ
-1 bowl of GF cereal. Usually Nature's Path or EnviroKidz. Becareful tho - They do make NGF cereal. Their GF cereal will say Gluten Free on it!!!

-Maybe Lifestream waffels Becareful here to, it's the same as the cereal above. It's made by the same company.

-Maybe a can of fruit. Mmmm tropical fruit...

-Eggs - scambled

Lunch:

Meat Rollups with corn tortillas. Carl Budig Meats are GF. I use La Banderita corn tortillas. Misson tortilla's is another fav of some people. The La Banderita are around 1.00 - 2.00 for 27.5 oz!

Potato chips - Lays or Ruffles

fresh veggies - carrots, celery

Supper:

Plain meats, fish, chicken - no marinades. You can buy GF marinades to do it yourself. Last night pork chops on the grill. Drizzle some olive oil on them, season with Lawery's Seasoning Salt & Pepper. Toss them on the grill.

Baked, fried, mashed taters. We had baked our potatoes on the grill. Foil 'em, put them in in the grill for 20-30 min. I seasoned mine with Mrs Dash (I believe all flavors are GF). We had some fresh made salsa - I put some of the on top too.

Canned veggies (check theses to make sure their GF). Had green beans last night.

I hope this helps. Whole foods are usually best to at least start out with. Whole foods are foods that are not processed. Fresh Veggies, fruits. Plain meats. Many of the processed foods contain wheat. It's the 2nd most added item behind sugar!

Good luck in your GF Journey. I hope you stick around and learn as much as you can. Knowledge is health!!

Take care!

Thanks SO much. You're reply was very helpful! That was something I've been wanting someone to do. I actually found a support group here. We had our 1st meeting the other night. Unfortunately, they didn't know much more than me, which was depressing. But maybe we can grow together & learn from each other. Thanks again.

Hi Ann,

Most mainstream cereal has malt flavoring...even the ones you mentioned. Cereal is a probably one of the biggest frustrations...just because they take something that is naturally GF and make it NGF! arrrgggggghhhhhhh

But, there are alternatives.

One of the few mainstream GF cereals are Fruity & Coca Pebbles. I prefer the 1/2 sugar versions.

A Rice Krispy alternative is Barbara's Brown Rice Crisps. I prefer this cereal in "bar form" heheheh like rice krispy bars Very Happy

As for your group...yes you can all learn together. I've said this a million times...read and learn as much as you can. Knowledge is power...Knowledge is health! Hang in there...it'll get easier...I promise!

Thanks! You too!

What great way to spend a weekend Very Happy I wish we had a Whole Foods in our town. The closest one is 1.5 hr away Sad

Hey - if they have a Bake House section there...check out the pizza crusts...they are REALLY good!!!! So are the other baked goods they have.

I got to sample the pizza crusts at the Gluten Intolerance Group Conference in Chicago. They put on a Beer & Pizza party with Bard's beer. My 1st beer in 2 years & 3 months Smile It was worth the wait Very Happy
