Good Morning Ann,
I thought I'd throw my 2 cents in too!! I've only been gf for about 2 months so I'm definately no expert, but I can tell you what tastes good to me! I had a really rough start because of the fear, but that truly has subsided with time. I still have some days when I feel lousy, but those days are the exception now rather than the norm. You will get there too, I promise! Here are some of the things I have found to be really good so far.
Breakfast:
Yogurt with any kind of fruit. I never knew quite how delicious fruit was until now! I love mixing strawberries or fresh pineapple in with the yogurt. This morning I tried making the pancakes from the "Really Great Food Co.", (I think that's what it's called but I can check for sure when I get home from work later.) They were absolutely fabulous! My kids even had some and said they were really good.
Lunch:
I haven't gotten too adventurous with lunch yet because I'm always on the go, but I have put tuna fish on rice cakes and it was surprisingly good. I also like egg salad on a bed of lettuce with a slice of tomato. The tuna salad or egg salad is really good in the corn tortillas too.
Dinner:
Now this is the meal I look forward to because my hubby usually makes me something special! My favorite is sauteed chicken with green and red peppers, carrots and onions served over rice. You can put any vegetable you want in it and all he does is sautees it all in butter for awhile and adds salt and pepper and it's perfect. He also makes me cheese steak in corn tortillas. (I have been eating corn tortillas like they're going out of style!)
You will be surprised how good meat tastes with just salt and pepper. We get so used to using sauces and marinades all the time that we don't realize how good it can be just plain (as long as it's cooked right).
Good luck my friend. You will be fine. Also be sure to get some gf vitamins as well as calcium. (I got mine at Whole Foods).

Your 2 cents are totally welcome. You were actually getting me hungry. Surprisingly, I DO do the yogurt & fruit thing already. I love it. I think lunch is the hardest for me, but you & Al gave me some good ideas. Keep 'em coming!

Hey Al, I'm so excited to hear that Buddigs meat are GF. I miss my turkey, cheese and mayo rolls. That just made my day.
Ann: Whole Foods has a 8 page list of GF foods at their store, I'm going tomorrow to get the list and start shopping.
I'll be out and about the next week so I won't be checking my puter. Hope everyone has a wonderful, safe and sober holiday weekend and I'll catch up end of next week...............Nikki from Sugar Land |

Nikk - Glad to hear you can have your sandwiches again! It's kind of funny...as kids we would always beg for the Carl Budig meats...I don't know why, but we did. Hehehe Now I NEED to have them
