I was in the local mountain shop and found AlpineAire Foods www.tyry.com. I turned it over to start reading ingredients, expecting nothing and saw instantly "Gluten Free".
It's a camping food, but I decided to try it right away (the tamale soup and the chili). For the serving size, convenience of instant food, and price it seemed to be worth trying a few packs (like $5-7 for serving for two). After trying it I found I really like the flavors, its worth having just for instant meals and not just camping... and this is going to make road trips a LOT easier.
Edit- after checking the site they have a gluten free listing here...

Edit2- a second more of searching found that the first page is only for their instant stuff, they also have a whole line of long-term storage for emergency or whatever...
