Fruit Crisp
4-5 Apples peeled, sliced and cored. Pears, peaches or apricots could be used too.
1 tablespoon sugar
1/2 cup quinoa flakes or certified GF oats [we use Bob's Red Mill].
1/2 cup brown sugar (packed)
1/4 Featherlight flour mix*
1/2 teaspoon cinnamon
1/4 cup margarine or butter
1/4 cup chopped nuts or coconut (optional)
Yield: 2 7oz Corningware Ramekins
Combine Quinoa, brown sugar, GF flour, cinnamon in a mixing bowl. Cut in butter/margarine till mixture is like course crumbs. Stir in nuts or coconut (if used).
Place sliced fruit ramekins. Cover fruit with the topping mixture.
Baking at 375 for 30-35 min or till fruit is tender and topping is golden.
*Featherlight Mix

3 cups rice flour
3 cups tapioca starch
3 cups cornstarch
3 tablespoons potato FLOUR (Not starch)

10/5/08 - Peg made this today and used 1/2 BRM Oats and 1/2 Quinoa Flakes. I think it's the perfect crunch-chew ratio All BRM Oats make the topping very chewy.
Since there's only 2 of us, we like to make this in the ramekins. We fill the ramekins pretty full . Eating a whole ramekin in 1 sitting is a lot - unless you're pretty hungry . If we don't finish it, we'll cover it and put it in the fridge for later. _________________ Al

I vote for a TNT for this recipe.
This is a great recipe. Did you modify it from Better Homes and Gardens by any chance? I made it today with peaches, and almonds for the nuts. I also baked it in a 9x13 pan, which took 40 minutes. My BH&G cookbok also recommends the following fruits
* 5 C. fresh or frozen blueberries tossed with 3 T. flour (use same flour mix as in above recipe)
* 5 C. pitted tart cherries tossed with 1/2 c. sugar and 3 T flour (use same flour mix as in above recipe)
* 5 C. fresh or frozen sliced rhubarb tossed with 1 c. sugar and 3 T flour (use same flour mix as in above recipe) _________________ -Colleen

Glad you liked it. There's no way we'd ever be able to eat that much. It tends to soggy and soupy - them's not good eats. I'm sure in your house it disappears in no time
Peg said we're gonna have to get some apples at the apple orchard this week [that's another ritual we do on this week off ]

I got mine for a wedding gift too. My mother still has and uses the copy SHE got for a wedding gift in 1965!

Ooh - that one looks neat. My husband got me this cookbook for Christmas last year. It is the one he had growing up. He has ordered me to convert a whole list of the recipes. Seems like that one was a gift for him and not me. Is that kind of like him giving me a vacuum for my birthday?

| My husband made apple crisp this weekend. He uses only oats no GF flour! I love it. Warm it up with a scoop of ice cream, HEAVEN! |

I have been using Lara Oats, because we couldn't get BRM, they are still large but not as chewy......they have a softer texture but they don't have the same flavor, kind of watered down I guess. However I had trouble with BRM having little hard pieces of the hull, in almost every serving I made and have not had that problem at all with Lara's. _________________ CD by Biopsy 3/25/88 |

has anyone tried this with Quinoa flakes? Just curious how it changes the texture. They seem so much smaller than oats. I've never actually baked with them so I'm curious. _________________ Rachel |

Peg's original recipe did use Q flakes. I'm thinking I might like the Q flakes version better.... _________________ Al

Last year before I found GF oats I was making this with quinoa flakes only. I thought the quinoa flakes kind of disappeared when cooked. The flavor was still good, but the texture wasn't quite right. _________________ Steph |
