Some things that we do is use corn tortillas,tacos,(for those that arent allergic to corn that is, mine have many additional allergies besides gluten)One favorite is nachos, we make steak and cheese nachos. We also make pizza with eggplant and lasagna with cabbage leaves. I make pizzas and also breadsticks from the same recipe too: this makes l round cake size pan of pizza tsp oil, tbsp yeast, l/2 cup + 2/3 cup + 2 Tbsp GF flour, 2 tsp xanthan gum, 2 tsp. Adobo seasoning, 1 tsp unflavored gelatin, l tsp Italian seasoning, 2/3 cup of whatever milk you use:soy,dairy,almond, l/2 tsp sugar Mix the yeast,flour,xanthan gum,seasonings,gelatin on low Mix milk,sugar & oil in a blender then add the two together and mix well. Spread it in a greased pan (I use a spray) Bake at 425 for 10 minutes. (You can slip this size into a gallon size baggie and freeze 2 together) Top with your favorite toppings and bake 20 minutes. I put the cheese on last 5 minutes. Everyones taste buds are different but this works great for our family and Ive got 2 teens,2 preteens and 2 younger ones under 7. Its also dairy,soy,egg free too. We've done barbeque sauce with chicken, all sorts. My gf mix is a combo of bean,brown rice, tapioca, and jasmine rice blend that I make in my vitamix. Hope this helps some. Take care. Lynne

Momof6, do your children not react to the gelatin and xanthan? those are corn based.

Nope, not at all. Its such a small amount and they are not deathly allergic at all, not like me and shrimp or latex, if its in the air, my throat swells shut. I do a rotation with my 7 yr old who is allergic to the corn,chicken,eggs,and a bunch of other things. He gets one day to eat some corn a week, another day for two eggs and another week he can eat chicken one day. If he were to have all three on one day, he would get sick. I use my own homemade eggreplacer for things and no one notices any difference. I used to try to make the various dishes and it got so hard to tell which had the soy or dairy, and so on, I decided to make everything safe for all. I do offer 2 different things too for veggies and sometimes a main course because with 8 people there are different tastes too. Hope youre having a good night. What time is it where you are? Its 1 am here. Up again tonight. If I dont fall asleep between ll and l, Im up for the night. Im taking the liquid prednisolone, at 6 am and noon and Im wired for the month! No dreams for me. Lynne, it is just past midnight in CST.

I know about the not sleeping. When the fibro flares, I have insomnia. I have had it the past 2 nights. Usually when I take my zanaflex, I go nighty night............in fact, I need to get off the puter to go take my meds.

Hope you get some good deep shut eye! Im going to lay down awhile and watch my local christian channel til its time to get up in 3 more hours, atleast my body will get some rest. I understand about Fibro too, thats on my list. I went through the alphabet sorta, I told them I didnt want the Refractory sprue since I already had 2 Rs: RA/RLS.
