Now that I've gotten all "creative" in the kitchen, I'm thinking about converting this recipe (pumpkin cookies). I'm betting you can sub the regular flour with the Featherlight mix. And I'll probably leave out the raisins and walnuts, since nobody in my family likes those. Any other suggestions or tips? Don't forget to add some xanthan gum....1/2 teaspoon-3/4 teaspoon. If I was making the cookies I would go ahead and add an extra 2 T GF flour mix. I've found that NGF cookies coverted to GF always need a bit more flour, but then again I like a more crisp cookie. Also remember to let the dough chill well before you bake them. If the first batch spreads too much then add a couple more tablespoons flour.
Pumpkin chocolate chip cookies are delicious. I bet pumpkin chocolate chip cookies would equally delicious. I think I might have to try that recipe.
Also FWIW I've found that most cookie dough freezes exceptionally well.

Hehehe, thanks TEC! These last couple of weeks have been absolute hell. I need to get my mind off life for awhile. Cookies usually do the trick. It also gives me an excuse to make a huge batch of Featherlight flour.
And thanks for the tips! DH is going to the store soon, so hopefully I'll have all the stuff I need to make these this weekend. There was another recipe on that site for pumpkin chocolate chip cookies if you're looking to experiment as well. DH doesn't really like chocolate, and I thought pumpkin and chocolate might be an odd combination. That's why I want to start with this recipe.

Did you make the cookies yet? If so, I'm waiting on a full report.
I just got back from the store and now have all of the ingredients. I think I'm going to make pumpkin chocolate chip cookies though. |
