Can I use Flax Seed Meal instead? Almond meal is asked for in some bread recipes. Also, when it calls for powdered egg replacer, what do I do? I use a combo of oil,water,baking powder ore else water and gelatin. That would also be used for breads. I dont want to waste the ingredients as food is hard for us to buy and with cooking for 8, its really expensive too. Thank you. Lynne Question

Hi Lynne,

I asked Peg about about replacing the almond meal. She's wondering what you're making and if you could post the recipe to see how it's being used.

MrsP also might know, she's the Queen of substitutions around here Wink

2 egg whites from large eggs
4 drops of yellow food color

Sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended. This makes 1/4 cup, which is equal to 1 large egg. If you use this homemade substitute for scrambled eggs, cook it in vegetable oil or margarine so the eggs won't be too dry.

I have never been happy with any baked good that uses more than a tablespoon or so of flax meal. So I would not sub flax seed meal for almond meal. I would use another nut meal or a high protein flour (bean flour, quinoa flour, etc.). If you have any nuts on hand you could just grind them down in a food processor or coffee bean grinder.

As for the egg replacer, I'm not sure of a sub. You might consider using another egg, but I'm not sure how that will work.

What recipe are you making?

I cant use any part of any eggs because 3 of us are really allergic to them. The recipe is Honey Sweetened Hawaiian Bread
four flour bean mix 4 cups
xanthan gum 3 tsp
baking soda l/2 tsp
salt l tsp
egg replacer(optional) l tsp
Nut Wuick or almond meal 6 Tbsp (wonder if I can use Flax seed meal instead)
dried orange peel l l/2 tsp
unflavored gelatin 2 tsp
yeast 4 tsp

eggs l plus 3 whites (need replacing here)
dough enhancer or vinegar l tsp
honey 4 Tbsp
marg or butter l/3 cup
pineapple juice 12 oz
water l/2 cup

I have a recipe that uses l l/2 Tbsp oil, l l/2 Tbsp water and l tsp baking powder to =l egg or l cup water boiled, 2 tsp gelatin take 3 l/2 Tbsp of that mixture = l egg

Nut Quik (I think it's mis-spelled above) was a product that ener-g used to make, although I am not sure they still are. They used to make a soy quik too. Bette Hagman references both in her cookbooks, although have never seen or used either. They are intended to replace the protein in a recipe for those that cannot tolerate powdered milk.

Here are some ideas for replacing eggs. If you can tolerate soy, you can use tofu as well. 5 Tbsp. of puréed tofu equal one egg.

Egg replacer is usually intended to add binding and leavening properties. Ener-g egg replacer ingredients are as follows:

I personally would not substitute flax meal in that recipe. I think you would end up with too much fiber and not enough protein. I would sub powdered milk or something else with a high protein content. I don't know if milk is on your "can't have" list or not.
