I'm obligated to bring in treats next week. After talking with a coworker, I'd like him to be able to partake as well. He's on a low, low carb diet for medical reasons. So here's the requirements:

- Must be GF so I can have some
- Must be low (or no) carb so my coworker can eat some too
- Must be kinda sweet so I don't get hell from the rest of the coworkers about the lack of donuts/bagels/brownies/cookies

Bonus points for:
- Being fairly healthy. These last couple of weeks I've been eating horribly.
- Not involving much meat or cheese. Meat/cheese trays have been done to death.

I'm open to all suggestions! Thanks guys! Very Happy

What about a fresh fruit tray? You'd have to check out the carbs on the fruit - some are pretty high. Kiwi, grapes, pears..might work.

I was going to suggest a fruit tray too. What about sliced apples and either a caramel dip or a sweetened sour cream type dip? That way people could choose how sweet/carby they wanted it to be. You can even couch it in the fact that it's an autumn theme and apples are ripe right now. No need to mention that it is GF.

If you do apples, make sure to dunk them in some type of acid so they don't brown. We've given them a bath in OJ - that seems to work well. That will probably up the carb count a little bit. You could a lemon juice too.

You're right, Al. Here's how we do it in our house. This should do the job without increasing the carb count.

Colleen great minds think alike...apples with caramel. The fruit tray was also a good idea. Perhaps you could put a small bowl of melted chocolate in the middle ala fondue.

Great ideas guys! I knew y'all would be more creative than me. Very Happy DH is going to stop by our local store and see if they can whip something up (it tends to be cheaper than putting it together yourself). I'll also run the idea of a fruit tray by the coworker. I don't think he'd be able to eat the caramel/chocolate (he's avoiding all Halloween candy), but the fruit should work.

What about the basic three ingredient peanut butter cookies? (Peanut butter + egg + sugar). Can you use a healthy, low GI sweetener like Xylitol? If you aren't adverse to artificial sweeteners, I suppose you could use something like Splenda.

Another idea is fruit / jello mold. Strawberries have a low GI, and you can buy sugar-free jello (or do your own with gelatin). You can even add things like chopped walnuts. Have some whipped cream on the side for people who want a dollop.

Well, I ended up just ordering a meat and cheese tray. Sad I was really looking forward to making a fruit tray, but after seeing the prices on fruit I changed my mind. Why on earth are apples so expensive?

I still really appreciate the ideas. Smile I'm sure I'll have to bring more treats in the future.

Os - I should've warned you about the prices of that, sorry. Sad Prepared fruit trays are expensive. Even fruit trays that you prepare can get pricey. We will make our own trays since we like doing that kind of stuff. Fresh fruit is not always cheap. However, places like Sam's club you can get pretty good deals on that stuff. We always get red grapes at Sam's club. Hands down - the best grapes!! Go figure.

No worries Al! I figured store-prepared trays would be expensive, so I was going to make my own. That way you can also leave out the stuff you don't like (pineapple). I'm actually more disappointed about it for personal reasons. I like having fruit around the house. It keeps me away from the cereal at night. I was hoping to stock up on apples this week.

OTOH, this also gives me an excuse to get a Costco membership...

They have wonderful champagne grapes at Costco. They are little, tiny grapes about the size of a cherry pit. So sweet and delicious.....
