I love Indian food and it has a lot of foods that I can eat. This is from
[i]Ismail Merchant's Passionate Meals: The New Indian Cuisine for Fearless Cooks and Adventurous Eaters [/i]
6-8 med. potatoes
1\2 C veg. oil
2 garlic cloves, chopped
1\2 t turmeric
1\2 t salt
1\4 t ground red pepper
1\4 t cumin
1\4 t mustard seeds
Cook potatoes in boiling water until they are just cooked through. Do not overcook. When cooled, cut into bite-sized pieces and place in a pot.
In a skillet, heat oil and add the garlic, turmeric, slat, red pepper, ground cumin and mustard seeds. Stir over low heat until garlic has browned, about 3-4 minutes. Pour mixture over potatoes and stir. Cook until warm.
I personally like to add more spices than it calls for but not everybody likes it that way. |
