Oat Crackers ****
1 1/2 c Rolled oats
1 c Bean Substitute Flour
1/2 c Flax Meal
1/2 tsp Salt
1 tsp guar gum
3 Tbs. Maple Syrup
1/3 c Oil
2/3 c Water
Mix all of the dry well so that there are no layers showing. Add the wet ingredients and mix well in your mixer. Divide the dough in half and roll out to 1/8 of an inch on parchment paper. (To make this easier, top with plastic wrap that has been sprayed with GF oil spray). Cut with a pizza cutter and then prick with a fork. Bake at 325F for 25 to 30 minutes. When you remove from the oven, immediantly cut with the pizza cutter and then cool completely before storing in an airtight container.
Four Bean Flour Substitute Mix:
1 1/2 c. millet flour
1 1/2 c. sorghum flour
3 c arrowroot
3 c. tapioca flour _________________

| is there something I could substitute for tapioca flour? I'm allergic to corn, dairy and tapioca. |

you could probably sub it with potato starch and arrowroot. (1 or a mix of both.) _________________
