It is for VANILLA CREAM PUDDING
2/3 cup sugar (I used Splenda)
1/2 tsp salt
2 1/2 TBS cornstarch
1 TBS flour (I used GF flour mix)
3 cups milk (I used 2 13oz cans of Coconut milk)
3 egg yolks, slightly beaten
1 TBL butter (I used margarine)
1 1/2 tsp vanilla
Mix sugar (Splenda), salt, cornstarch and (GF) flour in heavy saucepan. Gradually stir in milk (2 cans Coconut milk). Cook over low heat, stirring, until mixture thickens and boils. Boil 1 minute. Remove from heat, stir small amount into egg yolks. Return yolk mixture to pudding. Heat to boiling, stirring constantly. Remove from heat. Add butter (margarine) and vanilla. Serve in dessert dishes.
I plan to add some sliced bananas and a cherry and call it a Tropical Pudding, I think. It isn't quite a vanilla pudding nor is it quite a coconut pudding, but it does taste pretty good. _________________ Sue Beyer |
