Guys this turned out so well if I do say so myself. This is going to be the P household's new yeast roll recipe for hot dog buns!
I am going to use my standby Yeast roll bread recipe with a few changes.
Pigs in a Blanket
1 pkg. AppleGate Farms Beef Hotdogs
2 recipes of the yeast roll recipe
Let the the hotdogs come very close to room temperature. Remove the weiners from the package and dry each one off with a clean cloth. Slice the weiners into 3 equal slices.
Make a double recipe of the yeast rolls below. When you get to the part of dipping out some to roll in a little flour, you will want enough dipped out to make a 'log'. The log should be about 2 1/2 inches in diameter. Slice about 1 in in thickness (2 1/2 in circle that is 1 inch thick) Take a slice of meat and place in the bread. Roll it around until it is completley sealed in the dough.
Place it on parchment paper. Repeat until all slices are in bread. Leave some room between the pigs to allow for it to rise. I let mine rise in a warm oven for 25 minutes.
Bake at 350 for about 30 minutes. (You will have some dough left over. I used that dough to make small rolls on a small pizza square to bake on. If you wanted, you could make a cresant roll with sugar and cinnamon or just plain.) We thought that it was just enough dough to encase and it made a soft roll very similar to the old gluten buns. I think that the secret was to lower the temp to 350 for the extra time to keep the dough soft.
Don't forget to double the amounts.
MrsP's Yeast Rolls (gluten free)
1 packet yeast
1/8 cup warm water
3/4 cups lukewarm milk
(scald then cool)
1/8 cup sugar
3/4 tsp salt
1 egg
3 Tbs shortening
1 1/2 cups GF flour mix (up to 1 cup extra reserved IF needed) [below]
1 1/2 tsps xanthum gum (I used guar gum)
Combine 1 1/2 cup flour with xanthum gum, set aside. Dissolve yeast in warm water with sugar . In a 2 1/2-quart bowl add milk, salt, eggs, shortening and 1 1/2 cup of flour with xanthum gum mixed. Beat on low speed scraping bowl constantly (30 seconds). Beat on medium speed scraping bowl occasionally (2 minutes). Stir in remaining flour until smooth. Turn dough onto well (use out of the reserved flour) floured surface. Roll around lightly to coat with flour. _________________
