Peg and I were hungry for "something good" today. We went thru the list of things we have in the freezer. My marinaded steak, wild salmon, tilapia, shrimp...what was the last one? Shrimp? Yeah, that sounds good!
This was one of those "make it up as you go" kind of meals...scrounge around for stuff and see what you get. Kinda like Dinner Impossible. After a slight disagreement/altercation on what type of sauce to have, I decided to poke around on our "wheel of spices" and see what we had. Ahhh here's a Mayacamas Black Olive Pesto Mix. I could use that to create a sauce that wasn't a red sauce [a certain person did not want a red sauce with shrimp. Another certain person did not want an alfredo type sauce].
I get out the shrimp and start unthawing it. As I'm chopping up some onion to sautee the shrimp in, I'm thinking...mock crab...that'd go good in there. I go back to the basement and get out the GF Mock Crab.
As I'm boiling the waters for our pastas [I have my GF pot and Peg has her NGF pot], I'm thinking I'd make a garlic butter type sauce. As I'm starting to put ingredients in the pan for the sauce I'm thinking...wine, that'd go good in there...I wonder if we have an White Zin laying around. Sure 'nuff we have some of those little 187ml bottles of Sutter Home White Zin.
Now I've got all the previously gather ingredients in the pan. As I taste it I'm thinking...artichokes hearts, that'd go good in there. I dig around and find a can those....open 'em up and dump 'em in. Let the 'chokes heat thru.
Peg says "Hey we've got some tomatoes that we need to use - that'd be good in there".
A cereal bowl full of pre-cooked, devained shrimp.
A cereal bowl full of GF Mock Crab meat
1 half medium onion diced
3 heaping teaspoons minced garlic
1 packet of Mayacamas Black Olive Pesto Mix
1 187ml bottle of White Zin wine
1 14oz can artichoke hearts
1 diced & seeded roma tomato
2-3 tablespoons of Olive Oil
2-3 tablespoons of butter
2 teaspoon of Penzey's Italian Herb Mix.
1 package of your favorite GF pasta.
Fix your favorite pasta per favorite pasta directions.
Sautee olive oil, garlic and onions until onions are translucent.
Add in shrimp, GF Mock crab, and packet of Black Olive Pesto Mix and stir
Add almost all of the White Zin wine and stir. Drink what's left in the bottle.
Turn down the heat a bit, the shrimp is already cooked, you just need to heat it thru. This will allow the wine to cook out and reduce a bit.
Add butter and stir. This will richen up the sauce.
Add diced tomatoes & Italian Herb Mix and stir right before you serve. The tomato adds just enough color to make it look interesting. Sorry no pictures, too busy eating!
This has been the only GF Mock Crab meat I've ever seen.

Al: I really miss having the imitation seafood because we haven't found a source for any that is gluten free. I assumed that there wasn't any. What stores carry the brand that you found? I wonder if there are any outlets in the greater Chicago area? My husband likes to go completely meatless during Lent and I tire very quickly of fish that I can afford.

Hi Sue,
You can find this at Woodman's Grocery stores - at least I've gotten it at "mine" in Appleton, WI. I know there's one in the Kenosha, WI area.

There's a Woodlands in the north 'burbs. Can't remember which one though, sorry.
The pasta sounds delicious! I too am in need of something good...maybe tomorrow. |
