Molasses Cookies
1 cup brown sugar
3/4 cup Crisco
1/3 cup molasses (mild flavor)
1 egg
1 3/4 cup Featherlight Mix*
1/2 cup Bette Hagman 4 Flour Blend
1 tablespoon Quinoa Flour
1/4 teaspoon Xanthan gum
2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/8 teaspoon cloves
Mix ingredients together. Make into balls and dip in sugar. Place on ungreased cookie sheet about 3" apart.
Bake at 325 for 12-14 minutes.
Allow to rest on cookie sheet for 1-2 minutes before removing. This allows them to set up a bit.
*Featherlight Mix

3 cups rice flour
3 cups tapioca starch
3 cups cornstarch
3 tablespoons potato FLOUR (Not starch)

LOL!! She is easy, but she's not cheap...trust me! She can be rented out..

I was busy in the kitchen today too. Made fudge & date balls at GF grannies house. Came home and made Red Hot apples and started FN's meringues only to realize I left the chips at GFG's house...tomorrow. |

Funny! The other day I got on here to see if I could find a comparable recipe to my molasses crinkles that I've made so often. I opened the thread, and there in "all its cookie porn glory" was a pic of exactly what I wanted to make! If the pic hadn't been there, I wouldn't have been sure if it was the recipe I wanted. Good timing Al!
So I made them, and they are so close to my old "poison" crinkles that I could barely tell the difference. DH loved them too! Thanks Al and Peg!
Frankly, If I could never again eat anything that resembled my "old" food, it wouldn't bother me. It's so wonderful to feel good for the first time in memory, that giving up gluten has been totally worth it! But, it is a nice bonus to be able to enjoy something familiar once in a while!
