Thank you guys for all the input and ideas. I am leaving the house now to take my mom to the hospital to have her gall bladder removed. Seems her Christmas Day stomach problems were not so benign after all. When we get back, I will read them over and blast you with more questions and anxiety about feeding the gluten eaters. Very Happy Thank you all so much.

Colleen, I pray that your mom is doing better! I saw how bad a flare with the gall bladder can be before my MIL had her's out years ago. Not a 'fun time'! Hopefully she will soon be feeling much better!

OK - how does this sound for a menu? Al - please tell Peg I will expect her at 6:00 on January 11. Very Happy

Dinner
Al's Minestrone Soup - make a double batch the day before and reheat. Al - have you ever made it in a crock pot?
Some kind of creamy soup - maybe a potato ham soup?
Corn muffins - mix up the dry stuff ahead of time and just add the wet stuff and bake in the evening of the event
Chebe all purpose with cheese - tastes normal enough, and every gluten eater I've ever served it to likes it.
Green salad with GF dressings - the bagged stuff is quick and easy.
Waldorf salad (apples/grapes/walnuts/celery in a sweetened mayo dressing)
Lemonade
Ice water

Table munchies
GF Party Mix
M&M's

Dessert
Linda's "free of lots" brownies - I've served those to gluten eaters lots of times and they always love them
Vanilla ice cream
Coffee (My husband drinks it, so we have it to serve. He'll have to show me how to make it Very Happy )
Herbal Tea assortment

What do you think? I think I'll stop hyperventilating as soon as Peg gets here.......

C - Peg says she'll only come if she can bring her Sou Chef, roadie and Yes Dear Man.

Peg was reading over my shoulder...we're not crock pot cookers...so we couldn't tell you how it'd turn out. Maybe there's a Crockpot Ninja out there that could answer that. It's really not very time consuming to make it

The menu looks great. We'd come out just to eat the food! Shocked

Sadly my party mix is gone. I finished it today. Might need to make some more for NYE and NYD. Very Happy

You have much more self control than I do when it comes to party mix. Mine was gone a couple of days ago. Embarassed

Kathy,

Where do you find tinkyada lasagna noodles? I would like to try making your lasagna recipe. I found the tinkyada rice noodles but not the lasagna noodles Colleen, I make gluten free spaghetti with rice noodles and everyone that eats it, loves it. I use gluten free bread slices for garlic bread and sprinkle garlic salt on the buttered slices. It is good. Add a salad and make some gluten free pantry chocolate truffle brownies, add a little dab of blue bell homemade vanilla ice cream and your dinner is complete.

My go to meal for company is this....

Warm Spinach Dip
1 block of Monterey Jack
1 block of spinach (cooked & drained)
1 small onion minced
1 block of cream cheese
1 small tomatoe chopped.

Bake in 375 oven for 1 hour until warm thoughout. Serve w/ Crackers.


Barbeque Ribs & Sweet potatoes
These are fabulous & always get raves

Baby Back or other bone-in pork ribs

Boil them for an hour and a half.. (this can be done the day before)
They should fall off the bone.

Baste w/ Gluten Free BBQ sauce... 1/2 hour before cooking.. Warm in oven at 350 bake.... Broil on high to crisp for 10.

Serve w/ sweet potatoe fries & a salad

I just wanted to comment on this. Today we are having 4 of our couple friends over [one has CD]. We decide to follow Colleen and do soup for our gathering today. We chose TW's soup and a variation of Peg's Creamy Potato Soup [replacing potatoes with broccoli & cauliflower].

As usual, TEC's comment is correct. Soups can be labor intensive. We didn't think at first, but now that we've paid special attention to it - yeah it is - thanks TEC for bringing that to our attention [now making soup is a pain the arse! LOL!!!!!]

However, it does have some advantages.

    All the prep work of chopping the veggies, etc can be done when times allows. Days ahead if need be. You could use frozen veggies-I can't say I have ever seen frozen rutabaga or frozen zucchini though. It may be out there. Given the area you live in I am sure there are larger grocery stores with already chopped fresh veggies.

    The actual making of the soup can be done well ahead of time too. Many soups benefit from the extra "soak time" [sorry too much Dealiest Catch] in the fridge.

    Reheating the soup in a crock pot on said day. Dump it in and forget it! This allows you to stress about the 100's of other things you've got to get done. "Yes, Peg I'll pick up my socks and underwear from the living room floor"


Good luck Colleen, I know it will be a smashing success!!!!

Oh - Peg made some more Honey Yogurt dinner rolls. This time she cut out all sugar and kept the honey. She said it'd be very easy to fool gluten eaters with those! She should know, she is one Smile

She also made a mini loaf of Italian herb bread too. We're excited to try that.

I think there needs to be just a touch of sugar added to the next batch.

Next time the lemon zest is going in those!!

I think you're giving me much to much credit when you said "As usual, TEC's comment is correct." I was just speaking from experience. I once made a variety of soups for a party and I nearly made myself crazy in the process. Never again!

Make your own taco bar. Smile

Meat seasoning can be GF. Beans, lettuce, sour cream, cheese, salsa, soft and hard corn tortillas.

Chili and baked potatoes also works well.

My favorite bean dip:
1 can of refried beans (refried black beans if available)
2 tomatoes, chopped
green onions, chopped
Salsa to taste
corn to taste
Mexican four cheese blend.
Mix all but the cheese together, heat and then melt teh cheese on top (microwave works for me).

Serve with corn chips

Tinky lasagna noodles can be found at Whole Foods. I've made lasagna several times with them and my gluten-eating DH (when he's not at home) says they taste better than the "bad" kind.
