Any Food Experience with Travel to the Galapagos Islands?

Greetings,

I've always wanted to visit the Galapagos Islands, and we've long intended to go there to celebrate something big (like a significant anniversary), but now that we're both eating gluten-free, we really don't talk about it anymore. Does anyone have experience with travel there and the availability of gluten-free foods?

An answer will take a while but I should be able to help.

My brother has made several trips there and while he doesn't need to eat GF he has traveled with me who does.

He is on a ship (with internet) in Antarctica right now but I think I'll get a response in a few days.
