OK guys, what's with the 88 topics in the cakes, pies, and other desserts section and only six in the veggies and salads??? Let's start a movement to make veggies more interesting! Oh that sounds too much like an RN who taught a seminar I attended once. Her motto was "Start a movement. Eat prunes." She wanted to get bumper stickers made up with it. I guess it didn't fly, because I've never seen the bumper stickers!
Here's a good recipe for carrots. This is more of a method, but here goes:
Carrots, sliced on the diagonal, just to make them pretty. Say, 4 or 5
1T. butter or margarine
1 apple peeled, and chopped in 1/2" chunks, I like Cortland, but use a fairly firm apple.
1/2-2/3c(your call). sharp white cheddar cut into 1/2" chunks
Place the carrots and butter in a heavy saucepan with a tiny amount of water. Cover, and bring the carrots to a boil over medium heat. Let them steam a couple of minutes, just until crispy tender. Remove cover, and let water evaporate until you hear the butter start to sizzle on medium heat. Turn heat to low, and add apple. Cover, and let heat for about 1-2 minutes. Don't let apple turn to mush. Toss in cheddar, turn off heat, and let melt a minute or two. Serve.
If you are lactose intolerant, you could use this same recipe, eliminating the cheese, and using margarine. Add a couple of tablespoons of real maple syrup to water and margarine. Cook carrots as above, but when water is evaporated cook a short time more to thicken the syrup, add apples per above instructions, heat 1-2 min. Toss and serve. Be careful not to let the maple syrup burn. If you use artificial syrup, you probably would not need to thicken the syrup. Real MS is thinner than the artificial.

ok, here's the second recommendation for getting this into the "tried and true" category. This is a long time favorite at our house. My daughter (8yo) especially loves it.
We use Granny Smiths in ours, though. (Cortlands are hard to get in SC.) _________________ GF since May '07, positive blood-test results. |

| Hehe - yep. Even my picky eater of a son loves this dish. Although we use Jonathan Apples, since Cortland Apples are hard to find in NC. |
