I was trying to figure out why I felt somewhat anxious, achey and crappy over the last week and 1/2, other than anticipatory anxiety over my surgery on Jan 2. When I examined the Pacific Foods Chicken and Beef broths I used for both our Xmas dinner (beef broth for au jus - which was delicious for my first try) and chicken dinner for New Year's, I discover that they both contain "autolyzed yeast extract". Having only recently been diagnosed with delayed reactions to yeast, it's kinda like going GF all over again. My bad - felt crappy for days and didn't know why!

Just goes to show that label reading is always an ongoing process, whether we actually recognize our bad food(s) on those labels or not.

Nance I have to make my own broth because of the ingredients not agreeing with MrP. I take a Purdue Natural Oven Roaster Chicken and put it in a large corning ware roaster with onion, celery, carrots inside the cavity. I do not add any water. I add sea salt, a tiny bit of thyme, oregano, and rosemary.

It will cook in about 2 hours at 350. It will cook out a couple of cups of really thick broth. (if left to the next day, it makes that 'jelly' substance. This makes excellent base for soups or gravy. When I am done with the chicken, I will boil the bones to make a chicken stock that I sometimes freeze in smaller amounts to have on hand when needed.
