O.k., Mom. I'll help you get some veggies posted. A vegetarian to help you catch up with those dessert-atarians!
This is a favorite at our house:
1/2 of a sugar pumpkin or 1 butternut squash
2 Tbs. GF good quality, dark Soy Sauce
1 Tbs. oil (we use sesame oil or canola)
1 Tbs. sake
2 Tbs. sesame seeds
Preheat the oven to 400 F. Peel the pumpkin/squash, remove and discard seeds, and cut the flesh into wedges.
Mix the soy sauce, oil, sake, and sesame seeds together in a large bowl. Add the pumpkin/squash pieces and toss to coat well.
Place the pumpkin and any sauce into a roasting pan and roast for 20 minutes, or until tender and browned at the edges.

Sounds good Ali, and thanks for the help. Al's holding my feet to the fire on this one. LOL Wasn't sure how I was going to come up with 70+ more vegetable recipes....
No offense to all you dessert-atarians. (Good term, Ali!) Believe me, I'm on it when there's a good dessert around; I just like veggies more. |
