COUNTRY CABBAGE WITH WHOLE GRAIN MUSTARD

1 3/4 lb. green cabbage, cut in 1" chunks
3 T. butter or margarine
1 medium onion, diced
1 1/2 T. coarse grain mustard, make sure it's GF
1/2 tsp. thyme
1/2 tsp. salt
1/2 tsp. pepper

Cook cabbage in boiling salted water 2 minutes. Drain and rinse with cold water. Saute onion and butter. Add remaining ingredients, and heat through. This is good with ham or pork chops.

Oh, that DOES sound good! *hmmm... I have cabbage in the fridge...*

I've been making my own condiments lately. A lot of it is experimentation, but coarse grain mustard is SO easy to make, and then you can guarantee it's gluten free. I've got one in the fridge that's a sweet mustard with maple syrup. I was just playing around when I made it, but everyone that's tried it says it beats out the store bought gourmet mustards every time. It's unbelievable over corned beef, so I bet it would be really good to put in the cabbage.
Next time I make it I'll write the method down and post it.
