I took this to a potluck at work today (it's just one friggin potluck after another in this place). It was quite tasty. I thought the spice level was just right, but you might want to hold back on the cayenne if you are serving it to kids.

INGREDIENTS:
1 pound skinless, boneless chicken breast halves - cut into 1 inch cubes
1 pound GF smoked sausage, sliced
1 (28 ounce) can diced tomatoes with juice
1 large onion, chopped
1 large green bell pepper, chopped
1 cup chopped celery
1 cup GF chicken broth
2 teaspoons dried oregano
2 teaspoons dried parsley
2 teaspoons GF Cajun seasoning (I used this one)
1 teaspoon cayenne pepper
1/2 teaspoon dried thyme
1 pound frozen cooked shrimp without tails, thawed
2 cups instant brown rice

DIRECTIONS:
1. In a slow cooker, mix everything but the rice and shrimp.
2. Cover, and cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in the shrimp and rice during the last 30 minutes of cook time.

Can I do this sans shrimp? Have you tried it that way? I just don't like shrimp, that's why I'm asking...
And I am determined to make SOMETHING in my Crock Pot this year...it's been sitting in my cabinet since I got it--the only thing that's been in it is Emmett, when he hides from me! Rolling Eyes

I imagine you could just double the chicken and leave out the shrimp. This sounds really yummy. I was hoping to find some more crock pot recipes!
