What do you mean I have allergies on top of Celiac?

I was tested for food allergies as well and was astronomical to gluten, wheat...all the ones i expected and in addition was allergic to milk, eggs, mustard, leaks, pinto beans, corn, rice, mustard, tumeric, I could go on and on.....

i went to see an actual allergist who took one look at the results (I had IGG4 and IGE antibody testing) and he said that this tells him nothing. That these antibodies are created in response to food that you normally eat and that while you can be allergic to foods, that it is almost impossible to tell with any imperical accuracy if you were actually allergic to it or not. He said that the test results are on 60-70% accurate, which is WAYYYY less than the 95%+ acuracy required for diagnosis of celiac or other lab tests.

He told me that the best way to know how a food affects you is to go on a whole food diet, and then introduce in the foods you suspect are making you ill one at a time and see how they make you feel.

Just becareful!!!! No one can avoid everything under the sun....and it is NOT HEALTHY to do so... trust me I tried!!!!

Just have caution before changing your diet tooo radically - try seeing an actual Allergist and have him review your results. A RAST test is MUCH more accurate that the blood testing that most naturopaths and other general doctors order to test for food allergies.

Just dont want you to live on bad information like I did. Hope this helps.

Wow - that's really helpful. Thanks so much for posting. I will definitely look into seeing a allergist and getting a RAST test done. The Naturopath tested my IGE and IGG4 reactions like you've mentioned resulting in a radical change to my diet (no dairy, eggs, rice, almonds and gluten) It sucks! If I thought for a hot second I could go back to eating everything but the gluten I would jump at the chance. You can bet your boot I'll be calling my primary physician on Monday to get a referral. Thanks!

Odd new effect. After having cut out rice, dairy, almonds, eggs, brewers yeast and pineapple (yeah, there were two more I missed) for two weeks I've noticed that I no longer have cravings for sugar. I used to dump tons of sugar in my coffee / tea eat lots of cookies, want brownies, etc. But now - nada. I could give a hoot less about eating sweet stuff. Is that weird? Anyone else gone through that?

I also discovered Silk Soy Creamer which is a totally decent substitute for real cream in my coffee. (Yay!)

And worked the Bob's Red Mill sandwich bread mix into a decent loaf of bread without it tasting too much like baking soda, but still having a decent rise. It could still use some work, but at least I can have toast and jam in the morning.

BTW Soy cheese is gross. (Scrape the powdered orange stuff off a Dorito chip and compress it into a tofu sponginess block of unmeltable ick - Gag). Just MHO. Wink I miss my real cheese.

I'll have to try the Silk soy creamer. I had some in my Chai back last year or so at Barnes and Noble, and it was good. I don't know if it was the same brand, but I didn't mind that it wasn't real cream. Thanks for the heads up!

Here's someone just like you -- Karina can't eat eggs or poultry, dairy, gluten, etc. And she is a brilliant cook, written up with rave reviews, etc.

You won't believe the things she makes! The most lucious, soul-warming food imagineable!

Jenn - my craving for sweets has diminished greatly since cutting out my bad foods. Of course, making do with Enjoy LIfe chocolate chips and peanut butter might have something to do with it. Basically, the less grain I eat the less I crave carbs. I think that's a sign that your body is adjusting to the changes and becoming more balanced.

Oh yeah - Gluten Free Godess/Katrina rocks!

Ah crap. I lied! I guess I was having a moment of "sweet free" but it's back a little bit. Tonight I *had to* make brownies. lol... the chocolate monster is a hard one to tame. Wink Very Happy They came out okay. I'm still having trouble getting a good sub for egg that doesn't taste like baking powder. But overall they didn't turn out too badly. I also discovered "butter" that I can have (GF/DF/CF, etc) that's actually pretty good. (Though it's *stupid* expensive) I used it to make the brownies and they tasted pretty good. Up until now I'd been trying coconut oil but it wasn't quite right, palm oil was a bit better but not much. That subtle underlying butter taste is terribly conspicuous when absent.

And to everyone - thanks all for the links to GF Goddess - I've seen/heard of her site before but hadn't checked it out all too closely - I'll get on it now though!

Also doing well with baking bread. I made a completely decent loaf last week and was quite pleased! It had a good rise, didn't taste overly baking soda-y. Bob's Red Mill mix with soy milk, egg sub (1 Tbl egg replacer + 6 Tbl warm water, 1 Tbl cornstarch + 6 Tbl warm water or soy milk) all the other ingredients and 1 tsp of Penzy's Bravarian Spice Blend (crushed brown mustard, rosemary, garlic, thyme, bay leaf and sage.) in the bread machine on medium white bread setting. Bingo! Pretty good!

I think tomorrow I'm going to try to make a cinnamon swirl bread with the same basic bread mix (I tried BRM's cinnamon/raisin bread mix and it came out like a brick and was too doughy and heavy) needless to say I didn't like it. I think I can do better on my own. We'll see...

And I've found a small consolation - coconut chocolate ice cream - no dairy, soy or rice. It's not even close to Ben and Jerry's (boo-hoo) but it'll do in a pinch!

Toothpaste, funny sad story today about the silk creamer. I took my mug and put in a healthy bit of Silk creamer in it and then walked down to the coffee shop to get an Americano* in the same mug. The poor girl was so confused. First she asked if she should dump the cream out. (Uh, no! I just put that in there!) Then she made the drink and I watched *IN HORROR* as she scooped milk foam off the regular steamer pot and put it in my drink. Shocked I'm sure she was just trying to be nice but I actually had to make her re-make the drink. She kept trying to push the plain soy milk on me (yick) I just had her make it plain. Thankfully I had a bit of creamer left back at the office so I wouldn't have to do without my morning cup 'o joe - but geeze! Don't be messin' with my coffee like that! lol. I had to go buy another container tonight so I won't be Joeless tomorrow. (Sooo thought I'd have enough Silk to get through the week - would've too if I didn't have to pitch that cup this morning) Ah well.

*Americano = double shot of espresso w/ 12 - 16 oz. hot water depending on your tastes.

Argh! Don't be messing with the hot beverages! Sorry about that, Jenn!

I bought the Silk Creamer and didn't even notice the difference when DH brought me a cup of tea this morning to wake me up so I could drive him to work. I drank about half of it and then asked him "Is this the silk?" because it dawned on me I'd run out of cream last night. It's GOOD stuff!

Of course, I messed up the milk-free thing last night when I discovered that Wal-mart brand cottage cheese is GF, and I hadn't had cottage cheese in 8 months. I'm only lactose intolerant and I seem to get over the discomfort pretty quickly, so I amn't going to worry too much about going milk free.
