OK, folks. I think it's been a while since we updated this thread. Help us all get new ideas by posting what you had for breakfast.

My favorite continues to be yogurt (yoplait or darigold are marked GF) and a piece of fruit. I often also have leftover brown rice from the previous night's dinner with a piece of fruit and maybe some string cheese.

Has anyone tried the gf frozen quiches from Lean on Me Baking Company? They have a lot of vitamins, which is sometimes hard to find in gf products. (most taste like cardboard, and have about that in vitamins) I usually just try to eat whole foods, but I quiche in the microwave would be awesome.

I was just curious if they tasted any good, before I order them online.

I haven't had them, but there are some reviews on the gluten free mall website.. Looks like the reaction is mixed.

We had been enjoying cheese grits for quite a while. I had been getting them at the local Aldi's and they were cheap---89 cents per small round canister. Aldi's seems to have discontinued them in favor of a box of flavored packets of grits--which of course aren't gluten free. The box costs more and there are fewer servings to boot! BAH!!!

I did come across a recipe from another forum for Puerto Rican Breakfast Custard. It is GF and, I found, rather adaptable.


This recipe sounds very interesting and gluten free, but I can't understand why it would take 30 minutes of constant stirring on the heat for it to thicken. I think the addition of vanilla and perhaps the substitution of brown sugar might also be interesting as well.


Puerto Rican Breakfast Custard
SUBMITTED BY: Lu
"This is a unique Spanish breakfast custard that my Puerto Rican father loved as a child and something my mother made for us as we were growing up. It takes patience to whisk the custard for 25 minutes, but the results are very delicious and warming on a cold winter morning."

COOK TIME 25 Min
READY IN 30 Min
SERVINGS & SCALING
Original recipe yield: 2 servings
US METRIC


About scaling and conversions

INGREDIENTS
2 tablespoons cornstarch
1/8 teaspoon salt
3 tablespoons white sugar
1/8 teaspoon ground cinnamon
2 cups whole milk



DIRECTIONS
Whisk together the cornstarch, salt, sugar, and cinnamon in a large saucepan. Stir in the milk to evenly blend ingredients, and set over medium-high heat. Continue whisking and cooking until custard reaches a thick consistency, 25 to 30 minutes. It is important to stir the entire time, or the custard can easily burn or clump. The custard will continue to thicken as it cools. Spoon into bowls to serve.


I found that if you use a double boiler, you probably don't have to stir it quite as much. I'm not even sure just why the recipe calls for 25 minutes, either. I have cooked it for less and it was fine. I have substituted brown sugar for the white sugar and added vanilla as well. I was considering adding different dried fruits like raisins, etc. It really is very good.

Bob's Red Mill GF Hot and Tasty Cereal with cinnamon, brown sugar and blue berries. An Apple or Banana and some hot tea.

Shelton's turkey sausage or Wellshire farms turkey bacon, eggs and fruit.

Envirokids Gorilla Munch or Amazon Flakes with Pacific Foods Vanilla Rice milk. Fruit and hot tea.

Since going GF I've been baffled as to what to eat for breakfast. I generally just have some fruit.

I have, however, found some really nice wholemeal GF bread, which is also dairy and yeast free. And I have found it tastes absolutely AMAZING with chickpeas on it. (Basically like baked beans on toast but chickpeas instead).
I think I may be addicted to chickpeas, as I can eat them straight on toast with no sauce at all, sometimes I spread a little tahini on the bread, but most of the time I just pour them straight onto the bread and gobble them up.

Call me weird, but eh... I like it Laughing


I really should make some buckwheat pancakes one day. I love pancakes.

I love the rice cereal at the closest store to find gf foods. 45 min srive. It's soo good. I put frozen bluebereies on top or honey. Bananas. I'm lookingh forward to reading the grits section.
My girlfriend made awsome grits in AL. The only other I've tried is instant and yuck! Maybe these recipes will remind me of her. Thanks.
Breakfast is hard for me. To tired to cook bacon and eggs and usually running late anyway.

I've been eating Dora the Explorer cinnamon cereal and an orange for breakfast with a mug of hot milk laced with vanilla. Maybe Dora isn't the most healthful cereal, but on the tale end of morning sickness, it's the only one that settles nicely.

I'm a big coffee drinker and I miss it. Hot tea didn't do it for me, but I find the hot milk and vanilla more satisfying.

I have green tea, a V-8 for sure and then I scrounge in the refrig. pantry for something/anything.
I have tried: Van's waffles-okay, Trader Joe's Banana Waffles-where is the banana?, rice cake with peanut butter and Poliner All Fruit Jam, Trader Joe's Tropical Granola-good, recently Rice Chex and Berry Berry Kix, left overs from dinner, GF oatmeal, GF Grits....

The problem is I still can't use milk or eggs but, I haven't waited the full 6 mo. yet.

I have had all the lean on me things & sorry to say they were not a big hit with us four gf eaters. They were watery......
