What's cooking in your kitchen?

I've been having a lot of fun lately. One of the things I'm starting to do is experiment with ethnic cuisines, many of which are naturally GF, and others can be easily converted.

Currently, I'm making a lot of Indian dishes. I have a great recipe for Butter Chicken that I'll post. I've also found a bunch of recipes that use lentils and veggies. One I made the other day was Curried Lentils and Sweet Potatoes. I also made Eggplant Bhartha. I'm really new to Indian cuisine, since we don't have a lot of ethnic restaurants around here, but am really enjoying it.

Next, I want to try Moroccan and Vietnamese cooking. Does anyone have any cookbooks they would suggest? Or other cuisines?? I've always done a lot of Tuscan type cooking, and find that converts easily to GF.
