I didn't have sorghum so I subbed cornstarch. Bad mistake, but not so bad that the cake didn't come out thankfully! I should have used rice flour or fine white corn flour. Oh well - live and learn!
Since there are only two of us in the house (technically three ) I froze most of this last night in slices so that DH can take some to work with him, or I could take some to class - and we could store some at the inlaws to have when I don't feel like making sweets and we're visiting them.
This made a really cool icing (listed on the site), and I never would have thought to make icing this way. IF you put it into the freezer like I did, this makes a cake that is similar to those gluten boxed freezer cakes. If you ask me, I have a feeling this will be a "do it again please!!" recipe, and we'll just move it straight to the freezer after we get the icing on it! _________________

I made this recipe today, and it has to be one of the best chocolate cakes I have ever eaten, GF or not. Moist, tender and not at all heavy. You could definitely serve this to gluten eaters with confidence. I frosted it with a simple buttercream tinted green for St. Patrick's day. I made it exactly as written and made 24 cupcakes. These baked for 25 minutes.
BTW - the author also has it posted over on allrecipes.com, but the xanthan gum measurement is wrong. It should say 1.5 teaspoons, not 1.5 tablespoons.
