Has anyone ever made this stuff up a day ahead? If so, how did it work for you?

We are having brunch tomorrow and pancakes are on the menu. We want to have as much stuff done ahead as possible. We're thinking about mixing up a pitcher of pancake mix today so it's ready to go for tomorrow.

Al, just now seeing this. I do not know how the Pamela's mix will do. I know that the Waffle recipe that I have posted on here says that you can mix it up and the instructions say to keep it in the fridge over night.

You can always give it a whirl and enlighten the rest of us with the results Very Happy Embarassed (did I type that outloud?)

If all else fails, you could mix up all of the dry ingredients and store in the mixing bowl. Put all of the wet ingredients into the blender including eggs. Give a quick whirl with the blender and then mix the stuff..........it should just be about 3 minutes to mix the pancake batter from that point. (unless you are cooking for 20 or more.)

Yeah, we decided to just go ahead and mix it up. We've 4 batches chilling in the fridge. We did a test run this morning - about 10 pancakes per batch [we've made them before, just never really counted to see how many 1 batch made] - gotta love testing like that! We'll have about 10-11 people coming tomorrow. Any leftovers will go nicely in the freezer!

Hmmm, I'm not sure. I've used the pancake mix before, and I know it works better if it sits for 5ish minutes. But I don't know about overnight. Usually DH and I just make up a bunch of pancakes and freeze them. Let us know how it works! Smile
