Well, we've just finished cleaning up from our Easter Brunch Eggstravaganza!

The egg bakes were Martha Stewart perfect [too bad I didn't have time to snap a few photos Wink].

The Aidells Chicken & Apple Sausages were big go'ers [say no more, say no more ]. If you have a Costco, Sam's Club or Woodman's in your area - give these a try! They're not so greasy, lightly seasoned. This product does say gluten free & no MSG on the label. Full disclosure - I did not call to ask them how they handle GF and NGF runs.

The GF pancakes were also a hit with the gluten eaters! Peg's 9 year old nephew proclaimed - "They taste like...pancakes!". Almost every adult went back for seconds. We had plain & blueberry ones. Peg's Mom really liked them!

Pancake batter refrigeration update: Yes, it worked very well for the over night soak. The batter did thicken a bit over night. After our test run on Saturday, Peg decided to add a heaping tablespoon of buckwheat flour to the Pamela's Mix recipe. This helped with texture and gives it a boost in flavor. Peg's Mom did say that they looked like buckwheat pancakes - this was before we told them they were GF and did indeed contain buckwheat [which led to questions about me having buckwheat...] Wink

This Easter Brunch was an interesting one to say the least. Peg's SIL is currently waiting for skin biopsy test results for....yup...you guessed it...DH. Considering her sx list, I suspect that our family will have to make sure that food is not only "Al Friendly", but also "Lisa Friendly". She's experimented with GF meals over the past week - she's noticed a huge improvements in her gastro issues and headache issues. Today, she loaded up one some of glutened goodies that were available. 48 minutes after eating, she stampeded off... She said the Derm may refer her on to a gastro as well. I've been telling her not to go completely GF just yet. She is really distraught over this. She is of Italian decent and LOVES her bread and pasta...

Per tradition in the Al-n-Peg house on Easter - we did indeed have an Easter Egg hunt for the kids. Instead of sending them out in the remaining snow, we decided to have a treasure hunt type search inside the house. We decided to give them a series of clues that would lead them to the next egg - and ultimately to their "grand prize". To make it more interesting, we put the clues in code that they had to decipher first. They seemed to have a great time doing it. After all...we must keep our "Cool Aunt and Uncle" status Wink heheheheeee

Overall, we feel the bunch was a success. We'll be doing it again!

Brunch sounds like it was delicious! I kept my fingers crossed in hopes that the baking powder/soda would last or rather hold overnight....glad to hear the pancakes turned out! Didn't realize making buckwheat pancakes were as easy as adding a couple of tablespoons to the batter. interesting!

Your egg hunt sounds like fun. I think I'll copy your idea for Easter Redo...

It was good! We were very pleased with the outcome. We had never done a brunch before - certainly not for that many. So we weren't quite sure what to expect! As usual we had way more food than was needed.

In an effort to prep as much stuff as we could ahead, we did 2-stage potatoes. We grilled about 5 lbs of diced red potatoes in foil packets yesterday. Today about 30 minutes before they arrived we got out the 12" frying pan to heat them and to make them GBD [Golden, Brown and Delicious!]. Since the oven was baking the egg bake, we fired up the grill to keep the potatoes warm. We were using our toaster oven to keep the pancakes warm. Peg started those about 20 minutes before they arrived. She was still making them as guests arrived. She could do about 5 cakes at one time.

It doesn't take much buckwheat - it has a strong flavor. One other note about the blue berry pancakes...we found that it worked best to add the berries AFTER the batter was poured on to the griddle. In the past we added them to the batter and poured them. Due to the large batch, it didn't seem to work that well - there were too many berries in per pancake. Be warned tho - you'll get Blue Berry Paws! Peg's fingers on her right hand were stained blue from handling the berries.

The pancakes seemed fluffy enough, so I think that part held up quite well. Smile

We had all the veggies & fresh fruit cut up the night before. Fresh golden pineapple, fresh cantalope, red & green grapes [Sam's club have really good p-apples and grapes!], and fresh strawberries.

Your post has my mouth watering...fruit, GBD, egg bake, pancakes. Mmm! You're right about Sam's pineapples they're always good.

I've sent that secret code site to my email, but I haven't looked at it yet. It should come in handy for Easter Redo.

Pineapple thingamajig is a sort of like a bread pudding but less custardy and more buttery. FN's mom (aka FS) always makes it for Easter or rather when ham is being served. Yesterday she used WF GF bread; last time honey yogurt bread.

Ooo, thanks for the update Al! Very Happy Now I can make pancake batter ahead of time. I wonder how well the batter would hold up to freezing. DH proclaimed they taste like pancakes too. And I'll keep the blueberry trick in mind.

Once again, my mom made enough food to feed an army:

Egg frittata thing (GF), which I dubbed "egg pizza": eggs, cheese, bacon, little bit of onion, cut into pizza wedges
Egg potato thing (NGF): potatoes, eggs, way too much cheese, crackers on top
Fruit salad (GF)
Cinnamon rolls (NGF)
Cinnamon rolls (GF, provided by me)
Easter (sweet) bread (NGF)
Spiral sliced ham (GF)
Asparagus cooked with garlic (GF)

I tried to make a nice pork roast with orange glaze for dinner, but I nearly passed out from the fumes. Out went the roast, in came the GF sesame noodles.

Gosh all that food sounds yummy, lets see we had sandwiches, fruit and chips. Laughing Laughing

We spent the weekend 4-wheeling and dirt biking in Ocala National Forest with one of the boys.

One word of warning on egg bakes. Peg was amazed at the amount of recipes that had flour as an ingredient! Shocked She had to look to find ones that didn't. She played Frankenstein with about 2 or 3 different ones to get what she was after.

Oz, what went wrong with the roast beast?

The roast beast (LOL!) sounded good on paper: throw a pork roast, some onions, OJ concentrate and brown sugar in a crock pot. The thing must've mutated while I was gone. I came home and the entire house smelled like overly sweet orange onions. Ah well, you win some, you lose some.

Next up for the crock pot is chicken with 40 cloves of garlic. I've been assured by several people that it's yummy. Will post the recipe if it works.

Sounds like fun, none of us race. This has actually been kind of a mid-life crisis thing for my DH. We didn't do sports cars we started with a Honda Shadow, then the Harley Classic for road bikes and a Yamaha TW200 for the kids to learn on, the latest was the husbands KTM250 which he made street legal so he can ride even more. Laughing Laughing (All this in the past year since his dad passed away, actually he finally decided on the KTM after the neighbor who is a year older than him had a heart attack and he decided he'd better enjoy life while he can.)

I think he has decided that his body is to old to race but not too old to ride 70 miles in two days through the woods. Very Happy Wink He did just get up from a mid day nap......lucky thing work is slow today. Confused
