March is going by pretty quickly for me. I didn't realize yesterday was St Patrick's Day until my sister-in-law sent me a text message. And then I didn't have any green to wear. sigh.

Anyway, my hubby's trip home was great, we had a good time and we got moved into an apartment here in OR. My mother-in-law was super nice and sent me three large boxes of our stuff (many of our things are in storage at their house) for my birthday. So I got to use my juicer for the first time yesterday.

I haven't had any gluten problems except for one unfortunate incident at a restaurant with a gf menu. They say the eggs are gf, just get it without toast so I did. But the woman taking our order asked my husband if he wanted my toast and he said yes. Well they sent it out with the toast sitting on top of my eggs! So I said re-do it please. But I'm pretty sure they just removed the toast and scraped off the top.
Other than that I did find that I have gallstones! Fun, BUT I realize now that sometimes when my stomach burns, it's not a food sensitivity, it's a gallstone problem, so when I get rid of the stones, my stomach should get better! I'll still have my gluten sensitivity of course, but I shouldn't have that mysterious burning when I know I didn't eat anything I'm allergic to. Just thought I'd mention that in case anyone else thinks he/she should look into that possibility.

Oh and this woman from church had me over for dinner and she made me that Thai Creations stuff that is GF AND she made me gf chocolate chip cookies for my birthday which was completely unexpected and much appreciated.

Three months till my hubby comes home for good!

Good for you!! It's takes a lot of "strings" to make a change like that. I admire and respect you for that! It's hard to leave something that you've been at for so long - heck - that's practically your "baby".

Make sure you give us [celiacforums @ glutenfree.com] credit in the liner notes of your quad-platinum disk Wink Yeah, maybe even send us some MP3's of your new sound!

Good luck in CO! I'll have more people out there to see now. I maybe coming out Jan 09 for a wedding. I think a trip to Deby's would be in order.

This has been a pretty good month for me. There's still a lot of snow here, but I can see a little patch of sky from the top of the window by my computer, which means the snow level has dropped over a foot. I might see green grass by July....

I just realized when I was thinking about what I was going to write, that I have not been glutened at all this month! Yay!!! It's getting a little easier every day. GF is starting to feel "normal". I have really been blessed with how supportive my DH, family, and friends have been. I can only imagine how hard it would have been doing this without their support. Not to mention all the knowledge I've gained from this board. You are a great bunch of people. Thanks so much!!

I made a cake the other day from Annalese Robert's book, GF Baking Classics. It was her Maple Walnut cake. I gave a piece to my best friend who is non-celiac. She loved it so much that she asked me to make one for her to take to an Easter dinner that she's going to. One of the guests who will be there has CD, and she wants to surprise her with the cake.

I'm getting a lot of quilting done. I'm actually carrying through on the resolution I made to whittle down my fabric stash, and get Christmas gifts made ahead of time this year

This year is FLYING by so far! I haven't posted much here for awhile. I've been doing really well! I've got this whole GF down pretty good now after a year. I still need to learn to do more baking with breads though... but I manage.

We just got back from a Florida trip for spring break with our 3 boys. 80's everyday with lots of sun and low humidity! Perfect! We've had SOOOO much snow this winter so we're all so anxious for the warm weather.... at least it's all melted now.
Looking forward to water skiing season coming up soon!

Hope everyone had a Happy Easter this weekend!

We are here!! Long drive! 1360 miles..... whew! Lots of nice country. My Brother-in-law Keith drove the big truck with Shirley and I in our rigs convoy style.

Colleen, I am bummed we did not get our pics done. You finally show up in the Ramones shirt and we just ran out of time. We really intended on going. So much to do, so little time. I hope the meeting continues to gather steam. I am glad I was there and if anything I did helped, then I am grateful for that. You are so active and helpful Colleen. Thank you for all you do!! Smile

We are getting settled in a bit. We just got internet access back up today. We have been shopping and getting the kitchen up first. (Gotta be able to eat!) I did real good on the road. The "La Tortilla Factory" GF wraps make a great breakfast burrito in a hotel microwave! Those things rule!! I used some GF turkey sausage, Safeway Egg beaters, cheese and those wraps. I made one for Keith and he was like "Man, I thought I was getting the good breakfasts on this trip. You have been holding out on me!" He was feeling sorry for me and I was eating good the whole time......
