This works just as well as the Pamela's mix, for less than 1/3 the price. I got the recipe from someone on another forum, who got it from someone else, so I do not know the original source. If anyone knows, I would love to give credit where credit is due. I have tried this in several recipes from the Pamela's Products website, and have been so pleased with the results.
Pamela's pancake and baking mix clone
1 ˝ cups Brown Rice Flour
1 ˝ cups White Rice Flour
2/3 cup Cultured Buttermilk powder (Saco brand was what I used)
1 cup Natural Almond Meal (may appear as brown flecks)
3/4 cup Tapioca Starch
3/4 cup Sweet Rice Flour
˝ cup Potato Starch
3 Tablespoons baking powder
2 Tablespoon Baking Soda
1 tablespoon Sea Salt
1 tablespoon Xanthan Gum
Mix all ingredients and store in an airtight container. Use as you would any bisquick-type substance. _________________ -Colleen

Can you use regular milk powder or does it have to be powdered buttermilk? _________________

You could try using powdered milk, but it would give a different flavor. Let me know if it works out. _________________ -Colleen

Cool.
I keep finding recipes that say 'Use Pamela's mix!' and I can't get it here... I'll mix this up today and try one of the recipes and let you know how it goes  _________________

Like Colleen said the flavor would change. But I wouldn't see why it wouldn't work. I make it up in large batches and keep it in the frig.

I am pretty sure that substituting the cultured buttermilk powder with regular powdered milk wouldn't work because the buttermilk is of a different acidity. That is what activates the baking soda. It might also affect the baking powder. If you do try this, I would do it in a very small batch the first time. If it doesn't work, try adding some vinegar or lemon juice or some other acid to get the product to rise.

thus far we've had no problems with the powdered milk vs powdered buttermilk (no one knows what that is here! ) I'm amazed we were finally able to find milk powder at the indian store no less...
Since Passover is upon us and I wasn't able to use it all before then ( ) I have given it to my MIL to hold for us until next monday when I want to expirament some more with it. _________________
