If you aren't alergic to SOY, soy flour is a great ingredient to add into any bread, cookies or muffins you make. It adds protein as well as makes the dough moister (and not so dry and falling apart). The box I have says to add 2 tablespoons of soy flour into your recipe! I just recently tried this and made some buns for thanksgiving and everyone (all 8 of us) enjoyed them and no one could telly they were gluten free!
