I am trying to plan ahead so I am not caught without food when I am on the run, and so I don't feel as put upon avoiding gluten. I'm new at this--one week.
So, I was thinking that there are those fun adult type lunch boxes that have ice blocks to keep salads cold and hot sections for nuking, and some even have utensils that snap in the lid. Just for fun, I thought I would get a couple of those, so if I am out running errands all day and I don't know if there is a place to grab food, I won't have any problems, and I can have something delicious to look forward to (think Molly Ringwald's sushi kit in The Breakfast Club--that was detention in style!)
Anyway, I made a batch of GF brownies in cupcake sizes and froze them for emergency snacks!
Aside from soup and various salads, what are good lunches, meals or snacks that one can bring with them shopping or running errands or to work, even?
(Or even if you are going to a function like a wedding, and you want to eat a meal before the reception, but you are away from home. You can have your special meal, even though it is on the run.)
I hope this makes sense. I guess I am asking for food to-go ideas that isn't just tuna salad, so I don't feel the drudgery of being deprived and eating just to not have low blood sugar. I don't want to feel bad about this restriction. |

Dinner or Supper, whatever you call it
Lunch for me is usually leftovers from last night's dinner. I also love baked potatoes with cheese and chopped up ham. If you don't have access to a microwave, there is always hummus and GF crackers, chips and salsa, rolled up lunchmeat in a corn or rice flour tortilla, Larabars, etc. The list goes on. I honestly like Clif bars my self, they are one of the few bars that are GF and use facilities that do not mill wheat as well.
Although Trader Joes has a GF flour tortilla that actually pretty good, gets a little dry though. Just coat it with mayo with a brush to keep it moist. _________________ Peace

Be careful. The only Cliff Bars that are GF are the Cliff Nectar Bars. All the other varieties have oats (Oats not grown in dedicated fields cannot be considered GF due to contamination during growing/storing/processing). _________________ -Colleen

Oats, in their pure form, are generally well tolerated by most celiacs (I think I read 97% in Dr. Green's book). Oats contain the protein avenin, which is technically different from the gluten in wheat (gliadin), barley (horedin) and rye (secalin). There is a small subset of celiacs that cannot tolerate oats in any form, gluten-free or not. I seem to do OK with them, but my son cannot eat them.
Mainstream products that contain oats are not safe due to gluten contamination in the growing, storing and processing. See this link on gluten contamination in mainstream oats. Al has bumped a link about oats, but I'm linking it here, along with another.

One of my biggest worries was being out shopping with a girlfriend and not being able to stop towards the end and have coffee and torte. My family is from Berlin and afternoon Kaffe und Torte is very much instilled in our culture, plus it just seems biologically and gastronomically in tune with life.
So, I figured out that the brownies that I made and froze can be defrosted without effort beautifully. I met someone who makes and freezes one size portions of angel cake. There are probably many that will work this way. I also liked the lara bar idea. So, as long as plan ahead, I won't feel deprived.

One of the great things about GF baked goods - most of it survives the freezing process very nicely.
I gotta tell ya - I think I've found a snack that'll take the GF community by storm. Everyone will have to have it. It'll be all the rage! Why it might even be the next Deep Fried Coke.
Frozen Brownies...on stick! Everything tastes better on a stick! To kick it up a notch - dip 'em in chocolate like Klondike Bars! I think I'd prefer white chocolate over chocolate chocolate cuz it's just too much chocolate
Many that frequent here know that I generally eat my baked goods [cookies, bars and some cakes] right out of the freezer. Peg made some Bob's Red Mill Brownies awhile back. Strangely enough there were some left overs - so I threw them in the freezer along side my dwindling supply of Choc. Chip cookies, KnK Donuts [those are hard to eat frozen - gotta wave 'em a bit] and whatever else is in there.
As I was foraging for some dessert type food, I saw the brownies. I wondered how the frozen texture would be - so I fished one out. It was perfect!! No to hard, not to soft - about the same texture as ice cream sandwiches [one of the few items I really miss].
It's a good thing I just ordered a case of BRM Brownie mix!! Oh yeah - this'll be something to add to our GF Mobile Nourishment Unit's Menu! _________________ Al

Do you really eat frozen desserts frozen?
I was amazed that the brownies came out without any texture or flavor alteration. So, that is great to think that I could make assorted desserts just for the ready. I was thinking that I could make mini tortes with the coconut crust that someone posted this month from Martha Stewart. Those freeze well, I'd bet. I would just need to think of a good ingredient for the center that would defrost well.
I am happy about this development.
Why not make that coconut crust on a stick dipped in chocolate? |

YUP! As long as it's not hard enough to break a tooth I rarely eat any of that stuff in it's unthawed state. I never think that far ahead

Holy crap, there's somebody else like me. Every time I take a frozen KnK donut out of the freezer and start gnawing on it, DH gags.
I would totally buy frozen chocolate covered brownies on a stick. You've had good luck with the BRM brownie mix? I was hesitant to buy some. _________________ Ostrich :>--O==={

Count me in guys! I love frozen stuff. I think it's a texture thing.
After you dip the brownies in chocolate you could roll them in all sorts of good stuff..... I'm thinking crushed Heath Bars, chopped nuts, mini M&M's, toasted coconut, etc. Face it, if you're going decadent it might as well be totally over the top! Can't wait to see the food porn pics of this. Get cracking Al!!
Back in the day (pre-GF) there used to be these little frozen treats I used to buy the kids. They were called incredible edibles. They were ice cream sandwiches made from cookies and frozen yogurt. My two favorites (OK... I didn't buy them just for the kids, soooo busted here) were peanut butter cookies with chocolate yogurt, and oatmeal cookies with raspberry yogurt. I finally started making them on my own. A lot cheaper that way. _________________ Steph

Hear you there. I always ate Skor bars. Haven't had any since GF, so haven't checked to see if they're safe. If all else fails, I think Ali posted a recipe for toffee bars that is excellent. _________________ Steph |
