I made these this morning for my son's 3rd b-day breakfast. We thought they were tremendous!
Gluten Free Blender Pancakes
1 cup buttermilk
2 eggs
1 tablespoons cooking oil
2 tablespoons brown sugar
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 cup rice flour
1/2 cup potato starch
1/4 cup corn meal
Pinch salt
Directions:
Place milk, eggs and oil in blender. Blend at low speed.
Add sugar and dry ingredients.
Pour 6-inch rounds into greased skillet or non-stick pan.
Flip when bubbles appear throughout, and the edge of pancake looks dull.
Add more milk for thinner pancakes or more flour for thicker ones.
Recipe makes four servings. (about 10 - 11 cakes)
I added more rice flour - a very heaping 1/4 cup. The thicker the batter, the higher and thicker the pancake. _________________

I made these again this morning and added a teaspoon of vanilla to the batter. My children were raving about how delicious they were!  _________________

Isto - is it really 1/2 cup potato flour (grainy, smells strongly of potato), or is it potato starch (white powder that looks like cornstarch)? I haven't seen a recipe that used that high a percentage of potato flour before, so I am curious.

The recipe said potato flour, but I didn't even realize it! I have been using potato starch the whole time. I think the person who wrote the recipe made a mistake - I think it should be potato starch.
