Another amazing recipe, I wouldn't have believed it if I hadn't tried it myself!
Tastes just like regular peanut butter cookies, delish!
FLOURLESS PEANUT BUTTER COOKIES
1 cup peanut butter
1 cup granulated sugar
1 egg
Directions:
1. Preheat oven to 350 degrees F.
2. Mix ingredients together well with a spoon or fork or hands, until it forms a soft firm ball (I use my hands - faster - takes about two minutes to firm up using my hands)
3. Roll into walnut size balls
4. Flatten with the tines of a fork, criss-cross, on an ungreased cookie sheet
5. Bake at 350 degrees F. for 10 minutes
6. Allow to cool half way before removing from cookie sheet to cool the rest of the way, so the cookies firm up and set some - they will crumble if you remove while hot
***Personal tip:
I use my hands to mix the ingredients together, and it totally sticks to my hands until after mushing it up for about two minutes, then it firms up into a solid ball ready to roll into walnut size balls...
You think it will never solidify, it seems like an awful gooey mess at first, but it does solidify in just about two minutes of mushing it together, then it pulls right off of my hands and doesn't stick to them anymore, and I'm ready to roll the cookie balls |

| These are wonderful. I have that recipe too and I think they're better than regular pb cookies. You can also add 1/2 tsp of vanilla to it for extra flavor. |

I just can't believe they taste just like the cookies with flour in them, can't figure that out, it's magical to me, haha! |

Growing up, my brother and I used to call these E.S.P. cookies because all you need is 1 egg, 1 c. sugar, and 1 c. peanut butter. Ironically enough, my mom called me over Memorial Day weekend to ask me how to make them...I told her, and then she came over with a fresh batch!  _________________ ~Torrey

I also add 1 teaspoon baking soda. Helps them fluff just a bit. OH and one cup chocolate chips! Oh and I don't mush them down. OH and I use brown sugar not packed!

Thanks! Sounds yummy! I'll give it a try with all your added ingredients!
I have been making mine with raw sugar, and it gives it a nice subtle crunchy texture, as the raw sugar doesn't dissolve fast enough.

I must be the only person in the world who doesn't like these cookies. I made them many years ago in my NGF days, and really disliked them. I love regular pb cookies though. _________________ Steph |

| I love these because you really capture the essence of peanut butter not the fluff of the flour. I can tell you this any event I take them to, all the NGF people scramble to eat them. I have put M&M's in them, mini's and regular, I have done cut up snickers and they are best with mini chocolate chips! Oh and for a bit of different texture, try crunchy peanut butter. |

If you try it with Agave, let me know how they come out. I was thinking of doing something similar to cut down on the sugar. (Of course, I was also thinking about adding chocolate chips, so it would be pretty much a lost cause..)

I'm not sure, but I think substituting nector for sugar would make it too runny and it not bake up right.
Otherwise, I would add honey which I've been using instead of sugar with other things, like my homemade chocolate milk with cocoa and honey, BBQ sauce, and other less solid things.
I discovered this recipe over a year after being gluten free, so maybe I had forgotten the taste of non-gluten free peanut butter cookies with wheat flour, hahahahaha.
Maybe I should revise my claim that this recipe tastes the same as 'regular' peanut butter cookies.
Well, one thing I can say for myself for sure, and that is I love them!

Yeah, that was my initial concern...it's just that I don't use white sugar and I am trying to figure out a simple and not too frou-frou dessert to bring to a BBQ we're going to on Monday...I'd like to make something, if I could... _________________ ~Torrey

I too love these. In all honesty, I try not to have them around at all! I tend to start eating them and have NO CONTROL over stopping! We are heading to my parents house tomorrow and MOM informed me she would make them for me, I begged her not to...I am trying to lose 10 pounds. So, thankfully, she didn't make them!
