Throw out what your having!!!
I think tonight, since our kids are at my parents this week, we will go easy. Either a protein shake with waffle or Tuna salad and crackers.

We're headed to a BBQ, so someone else is cooking our dinner!
I'm not sure what the final menu choices turned out to be, but probably burgers, dogs, and perhaps some chicken.

We had pan fried minute steaks with sauteed onions, swiss chard from the garden, and a salad called Ripe Tomato Stack with Pine Nuts and Mozzarella. I tweaked the salad a little, but the basic recipe came from a cookbook I just purchased called The Splendid Table's, How to Eat Supper. The salad was absolutely fantastic, and a feast for the eyes as well. You can download the recipe here.
My changes to the recipe included adding a couple of splashes of balsamic vinegar and 1 tsp. sugar in the raw to the dressing to cut the harshness of the lemon juice. What you can't see on the web version is how the salad is assembled. For each salad you take the stem core out of the tomato, and then slice the tomato in 3 large horizontal slices, and one smaller slice taken from the bottom of the tomato. To assemble it you place the sliced tomato upside-down and layer the mozzarella between the slices. I used a couple extra fresh basil leaves and poked them between the layers at the edges so that the leaves were showing. Beautiful. Phew! Now that all sounds YUMMY!
I lied, I didn't know hubby had chicken thawed out, so he made us a chicken, rice with calif/broc/mushroom casserole. It was really good. It is also what we are having for lunch today!  |

I was thinking the same thing Ostrich!
Tonight we are having
Crunchy Poppyseed Chicken Salad
4 cups broccoli slaw
2 large red peppers, thinly sliced (about 2 cups)
4 carrots, shredded (about 2 cups)
1 can (8 oz.) pineapple tidbits, drained (if you can't do pineapple mandrain oranges work too)
6 oz. Cooked Chicken Tenders
1/2 cup KRAFT Creamy Poppyseed Dressing
1/4 cup PLANTERS Cashews
COMBINE all ingredients except dressing and cashews in large bowl.
ADD dressing; toss to coat.
SPRINKLE with cashews just before serving.
Helpful Hint: broccoli slaw with carrot shreds is sold by the package. Oh and I don't add the cashews. |

Ground beef with garlic, salt and pepper wrapped in a Chebe onion/garlic flatbread with just picked lettuce and red onion. Oh yeah, and some digestive enzymes to go with that! _________________ Nance

Well I lied again. Our plan was the crunchy chicken salad, but my friend fractured her knee so I had to drive her all over town getting the supplies she needed....so we had Mexican out! It was good!

We're planning on having salmon cooked with lime juice and some fresh green beans. Yummy! Last night it was GF pasta dressed with cheese and sauce then more sauce on the top with fresh steamed green beans on the side. I even managed not to scarf it all down, so there are left overs for lunches this week. _________________
