How about canned chicken (in water )? I drain it and mix with Best Foods Light Mayo (GF!) and a bit of black pepper, garlic salt, dried cranberries, and dried onion. YUM! You can take this in a tupperware and eat with corn tortilla chips, fruit...keeps well in fridge.
