Peanut Butter Cookies
1/2 cup of butter or margarine
2/3 cup of peanut butter
1/2 cup of sugar
1/2 cup of brown sugar
2 tblspns of honey
1 egg
1/2 tsp of gluten free vanilla (McCormick brand)
1/2 tsp of gluten free baking power (Calumet brand)
1/2 tsp of baking soda
1/2 tsp Xanthan gum (used to hold ingredients together - replaces gluten)
1/2 cup of Bette Hagman 4 Flour Blend
1 cup of gluten free flour mix**
Cream butter, peanut butter and sugars together. Blend in honey, egg & gf vanilla. When well mixed add gf baking soda, baking powder, xanthan gum & flours. Mixing well after each is added.
Shape dough into 1 inch balls, roll in sugar and place on an ungreased cookie sheet. Flatten with a fork.
Bake at 375 for 9 to 12 minutes or until bottoms are lightly browned.
**Featherlight Mix
Source: Bette Hagman, The Gluten Free Gourmet
3 cups rice flour
3 cups tapioca starch
3 cups cornstarch
3 tablespoons potato FLOUR (Not starch)
Peg Notes:
2/24/07 - Updated this recipe. I was making these today and realized I have 2 versions of this. The above recipe, as currently shown will create a chewier texture cookie. Plus it's less beanie tasting. I tried this version to see if we could get away from the more expensive Bette Hagman mix. Al prefers this version better.
The flour mix below will create a crispier cookie [and less brown in color].
1 cup of Bette Hagman 4 Flour Blend
1/2 cup of gluten free flour mix**

Curse you Al! You spoiled my diet with these delicious cookies. They also passed the kid test with flying colors. My kids declared them "yummy".

Made these last night, but I subbed a mixture of 50% teff flour and 50% sorghum for the GF flour mix. Used 4-flour bean mix for the other part of the flours. Made a great addition to my kids school lunches for their first day back to school.
Can I vote twice for a TNT? I'm wearing a different outfit than I was the last time I voted...... _________________ -Colleen

Well of course - the outfit makes all the difference!!
Glad they turned out so well. We've gotta try some teff or sorghum. Those are not in Peg's arsenal right now. I don't know if we'd have room for two more containers of flour... _________________ Al
