For those who don't know, Emeril has a new show on Planet Green called Emeril Green. It's mostly about using whole, unprocessed foods to make meals still taste good.
This time, however, Emeril had a real challenge. He was working with a man who's granddaughter couldn't have eggs, soy, dairy, or gluten. Plus the meals had to be kid friendly.
The meals ended up being: a bean dip (mostly veggies and EVOO), spaghetti squash with marinara sauce, GF pasta (DeBoles) and sauce, chicken and rice with honey mustard wrapped in rice paper, and chocolate banana brownies (Enjoy Life chocolate chips).
What I really loved was watching the two guys trying to comb through Whole Foods, finding ingredients the girl could eat. Emeril seemed to get frustrated when they couldn't use anything from the buffet (mostly pasta salads), or even normal chocolate chips. They brought a dietitian along with them that explained a bit more about gluten. Emeril asked about rye flour (BRM) and the dietitian explained gluten is in more than wheat.
I can't seem to find the schedule, but I highly suggest watching it if you can. One gripe: they seemed to imply that rice flour could be (basically) subbed out for regular flour. They didn't touch much on the different flours and what they do, or even that you can buy GF flour mixes.

That is cool! It's great that the GF (and multiple intolerances) is getting exposure like this. I checked out the recipes, and they look quite good. i have a mind to try the brownies and the chicken wraps. Thanks for sharing that find!

I don't get that channel, so thanks for posting about this. It sounds like a good episode.
I have already printed the recipe for the rice paper wraps. I love fresh spring rolls, and this looks like more of an everyday version of them. |

Sounds cool Must be a channel I'm too cheap to get.

Planet Green is only available when you get digital cable, at least in our area. Sorry guys. Maybe you can find a clip of the show on the website?
