Last fall, winter or spring I made a casserole topped with cornbread that was pretty good and the leftovers were amazing good too. I want to make it again, but the recipe never made it to my recipe account or my recipe binder. I remember talking about it here but can't seem to find the recipe. Does anyone remember this? If not, maybe the whole thing was a figment of my imagination.  |

Perhaps you too were sleep-cooking...
I vaguely remember that. Cornbread, eh? It's not in this forum? I think this was the old recipe forum.
I'll see what I can find...

Was it a squash casserole?
My mother makes a good squash casserole with cornbread in it. Easy to make GF, just use GF cornbread. I don't think I've typed up the recipe, but if you want I can ask her for it. It's probably similar to what you are thinking about. _________________ Lauren
