Someone at my work brought in a dish from Lebanon called Kibbeh. He served it with cucumber and tomato slices with yogurt on pita. It looked and smelled delicious, and i would like to try making some myself. The only problem is that it contains bulgur. What do you think would be the best GF substitute for bulgur? I was thinking maybe kasha or quinoa. Maybe steel cut oats?

Any ideas?

forgive my ignorance showing, but is that the one that has the look of steel cut oats or is it just a richer wheat flour?

If it is the groats, I would probably go with Kasha (buckwheat groats) and flax meal for a stronger taste.
Quinoa and oatmeal will not come close to the wheat taste.

If bulgur has a just the strong wheat taste, I might try mixing buckwheat four with a little flax meal. That should have a good strong nutty rich flavor.

Millet also has a strong flavor, so you might want to play around with that also.

Sorry that I can't be more help. I will love to know your testing results. I love the flat Mediterranean breads! I haven't tried to replicate those though.

I would use quinoa or millet (cooking millet the "meaty" way, not the couscous-y way). Kasha has a very different taste. I won't eat oats, so I am not sure how that would taste.
