I'm sure most people don't know what lefse is, but I would really like a good substitution for the flour in it. It's mainly potatoes and flour, so I know the flour could ruin it if I use the wrong kind. It's also such a long process to make it that I don't know that I want to ruin multiple batches by using the wrong kind of flour.

My family always has lefse for the holidays, and even though I won't get to see them, I'd love to make some for myself for Christmas. I bought all of the equipment for it a few years ago after my grandparents taught me how to make it, and I'd really like to be able to use it again.

Thanks for the info Al. I'll search through them tomorrow. I figured you'd know what it was.

I'll search out the recipe I have because it's pretty different from the one you bumped up for me too so we can see if we can find a good alternative.

YESSS!

We always had lefse at Christmas. My mom learned to make it for my dad, who also liked lutefisk, but that's a whole nother story!

For those who might be wondering, there are various ways to eat lefse and we always spread it with butter and brown sugar before rolling it up. Small wonder a Mexican friend I once had described it as a Norwegian taco! Laughing Laughing Laughing Laughing Laughing (sorry)
