Bacon and Cream Cheese Stuffed Mushrooms with photo

8 ounces cream cheese, softened
6 strips bacon, fried and crumbled; reserve bacon drippings
1 small onion, finely minced
25 large mushrooms, stems removed
8 mushroom stems, finely chopped

Saute onion and mushroom stems in bacon drippings until tender. Drain and add with crumbled bacon to cream cheese. Stuff each mushroom with mixture and bake in preheated 350* oven for 10 - 15 minutes. Finish under broiler umtil tops are just browned.

Seriously, I will have to make these over at my DD's house. MrP can't have onions cooked in the house. I love mushrooms and onions!

Last year we just bought regular-sized mushrooms. This year we bought jumbo stuffing mushrooms. Can't wait!

I used the jumbo mushrooms, and the filling was enough for 14 mushrooms.
