This is a salad that our friend Jeannie would bring [upon our begging] to our gatherings...hence the name.
This has become a favorite in the A n P household.
Lettuce mixture:
1 Head of red leaf lettuce
4 oz of grated swiss cheese
2 granny smith apples chopped
6 oz of cashews
Dressing:
1/4 cup of oil
1/2 tsp dijon mustard
1 chopped scallion
1 Tbls poppy seeds
1/4 cup apple cider
1/4 cup of sugar
Put above in blender and pour over salad mixture just before serving.
Al Notes:
You can switch out any type of greens for this. We've used Spring Mix with some additional spinach. We've used a Mediterranean Mix. Knock yourself out.
We generally don't have scallions laying around, so we usually use minced red onion.
Don't be afraid to tweak the Mustard/Vinegar/Sugar ratios either. I tend to like my dressings on the tarter side, so I'll up the vinegar by just a little bit.
We don't put this in a blender, we put it in a shaker/mixer container and shake - shake - shake...shake yo bootie.
When we make this just for ourselves, we just slice up usually half an apple. Rub some lemon juice on the exposed flesh of the leftover apple and put in an airtight container for the next salad [which is usually the next day]. This will stop the browning. _________________ Al
