Hello Everyone,
I just wanted to mention a recipe book that has easy to make recipes, and flavorful desserts. Try ROBEN RYBERG "The Gluten-Free Kitchen". I can easily find all ingredients in Ontario, hopefully you can to. The carrot cake recipe, and peanut butter cookies, chocolate chip cookies, and pancakes are good.

Hi Smiles! Her Danish recipe was the first thing I attempted to make when I went GF. It's still one of my favorite recipes. Her recipe called Rolls is very good too.

I think it all comes down to personal taste. I personally couldn't stand any of the recipes I tried out of that book. I don't care much for recipes that rely so heavily on the starches. The mouthfeel is wrong to me. It is nice that the ingredients in her book are easier to obtain than a lot of the other specialy flours, though. Glad it is working for you! _________________ -Colleen

Wow, no recipes for pizza crust!
OK, here's my solution:
You need a 12" flat bottomed frying pan/skillet. Make a thin pancake recipe with rice flour sort of halfway between a crepe and flapjack. Get it out of the pan an onto a pizza pan and bake it in the oven until golden brown then paint with olive oil add toppings and bake.
1 cup rice flour
1 tblsp corn starch
1 tsp salt
1 tblsp sugar
1/8 tsp baking powder
1/2 cup eggwhites
1 cup skimmed milk
Have your 12" pan and oven heated and ready to go. Same heat as for pancakes, oven at 375°.
Mix the dry stuff first with your whisk then add the liquid and mix. Adjust with flour or milk to get the proper consistancy of very thin pancake batter. Grease the pan, Pam works, and pour right away before the batter thickens up.
When bubbles form and top is dry to touch, loosen around edges with spatula and flip crust out onto a cutting board and flip again onto a pizza pan. Into the oven and bake at 375° until golden brown.
Take it out, turn up the oven to 425° paint with olive oil, put on toppings and bake until done.

Good idea! I'm going to try that. I add ground flax to a lot of things, makes them seem more "whole-wheaty" to me. _________________ Steph |
