Hello!

Newbie here, but not new to gf. I thought I'd share my latest recipe find here.

I saw an intriguing pancake recipe in the newspaper that looked easily adaptable to gf, so we tried it yesterday.

IT IS AMAZING. We have been making pancakes for a couple of years with a home-made copycat of Pamela's and we were perfectly happy with that recipe, but I think this is even better.

For those of you who are also DF, you can substitute soy sour cream or mashed silken tofu with a tablespoon of cider vinegar.

If you are DF AND soy-free, I think using an equal amount (or maybe 1/4 cup less?) of coconut milk plus a tablespoon of vinegar would work.

The newspaper called this "Heavenly Hots."

4 eggs
2 cups sour cream
1 teaspoon vanilla
1/4 cup gf flour (I used betterbatter flour, which has xanthan gum in it)
2 tablespoons potato starch
3 tablespoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt

Beat eggs. Whisk in sour cream and vanilla(I used a KitchenAid mixer). Add dry ingredients.

Make the way you usually make pancakes.

This is much thinner than the gf batters I was used to, and I was a little nervous it wouldn't work well, but they puff up after you flip them. They're fluffy, but much lighter than the gf pancakes.

I think it would work really well as sandwich wraps, too.
