I was just wondering which meat/s other Celiacs eat... also what types of other protein you eat.
Since going GF, I can tell (much more) that chicken, fish, eggs, and nuts 'n' seeds are very compatible with my system... but beef and pork are very hard to digest--causing bloating, swelling, etc.
How do you guys handle protein?

Hmmm that's interesting. I know beef does not agree with my Mother. Vegitarians are supposed to have a hard time digesting meat if they try to eat it.
The beef & pork you are eating...is it plain (w/o any marinades)? Maybe there's some hidden gluten somewhere.
I tolerate everything well...except for the nuts and seeds. I'm not supposed to have them because of diverticulosis (pockets in the colon that they get stuck in and get infected).
If you are looking for protein, you might try quinoa (keen-wa).. http://www.quinoa.net/
Quinoa contains more protein than any other grain; an average of 16.2 percent, compared with 7.5 percent for rice, 9.9 percent for millet, and 14 percent for wheat. Some varieties of quinoa are more than 20 percent protein.

Hey Al,
It's the same however it's cooked... guess with me; it's blood type/genetics. Being part Cherokee, the beef and pork are foreign to my system. The fowl really suits my Native and UK genes, as does eggs.
That quinoa looks really interesting... heard of it before, but never gave it any consideration. I do great with [pure] cornmeal, but something different would be very enjoyable.
Maybe this or something similar could be used to make [the rare] pancakes... one of the few wheat foods I miss.

Part of the problem with beef and pork is it takes a long time to break down in the stomach, which may be the reason for the tummy upset.
FYI - becareful of eating turkey and ham in the cryovac packages - most of them have wheat gluten in the brine. Look for gluten free ones! _________________ Judy
